Say 'Yes' to Pesto

Say 'Yes' to Pesto
The following article was written by Keegan Baur. Spring is upon us, and I, for one, am so ready for warm weather. This past weekend, I wanted to cook a fresh and light dinner and decided to try the Avocado Pesto Pasta dish à la Chef Chloe. It hit the spot for me, and I’m definitely excited to use more recipes by this budding new vegan chef. Now see for yourself how easy it is to make this scrumptious dish! Avocado Pesto Pasta 1 pound dried linguini 1 bunch basil leaves (about 2.5 ounces) 1/2 cup pine nuts 2 ripe avocados, pitted and peeled 2 Tbsp. fresh lemon juice (about 1/2 of a lemon) 3 garlic cloves 1/2 cup olive oil Salt, to taste Freshly ground black pepper, to taste 1/4 cup chopped sun-dried tomatoes (optional)* *I’m not a huge fan of sun-dried tomatoes, so instead, I chose to use one sliced cherry tomato as a garnish. In a large pot, bring water to a boil.

Finding culinary inspiration in Merrill's lyrics seemed like it would be tough, but my sister knew what she wanted to make without hesitation. "How about something layered, because of all the vocal and instrument layering in the music?" From there we worked together to come up with this deep, colorful, and multi-flavored lasagna version of a timpano.

Vegetarian Chili If you’ve ever tried to make a vegetarian chili, you know how wrong this stuff can go. Some versions call for up to six cans of beans – a recipe for solitary confinement if there ever was one. Others taste like someone dumped a shaker of cumin into a pot of vegetable soup. They just don’t taste like chili. Chili needs to be spicy, meaty (even when there’s not any meat) and thick enough to hold a tortilla chip in place like the Sword in the Stone. It should taste right with sour cream and green onions.

For the Love of Food: Banana & Seed Granola Bars Even if you don’t live in Seattle, I am sure that you heard about our crazy weather this week. It was impossible not to hear about Seattle’s great “Snowmageddon” storm all over the news. Let me be the first to tell you how grateful that I am the storm is finally over the and city has returned to normal. I live fairly close to my job in downtown Seattle so even with the snow I was still braving the outdoors and public transit all week.
