Zesty Lime Shrimp and Avocado Salad

Zesty Lime Shrimp and Avocado Salad
Zesty lime juice and cilantro are the key ingredients to creating this light and refreshing salad, no heavy mayonnaise to weigh it down. Made with the freshest ingredients; jumbo shrimp, avocados, tomatoes, red onion, cilantro and chopped jalapeño tossed with some freshly squeezed lime juice and a touch of olive oil. This will be a huge hit at your Cinco de Mayo fiesta or summer bash! Serve this as is for an appetizer, or over lettuce o tostadas for a lunch or light meal. You can easily adapt this to suit your taste by adding more or less cilantro, jalapeño etc. If you plan on making this ahead of time, you can combine all the ingredients except for the avocado and cilantro and keep this refrigerated, then add them right before serving. Shrimp is low in fat and calories, but tends to be naturally high in sodium so if you are on a restricted sodium diet, you may want to limit your shrimp intake. In a large bowl combine chopped shrimp, avocado, tomato, jalapeño. Makes 3 1/2 cups.

50 Ways to Prepare Chicken Breast Every family argues about what to eat for dinner. But the Shrader family of Bluebell, West Virginia, took dinner-table combat to a whole new level last summer when 49-year-old Jackie Lee and his son, Harley Lee, 24, whipped out .22-caliber pistols and exchanged fire after sparring over how to cook their meal. What food could trigger a kitchen gun battle? The harmless, boneless, skinless—and often flavorless—chicken breast, that's what.

Bacon Guacamole Grilled Cheese Sandwich A guacamole grilled cheese sandwich has been on my to try list for a while now and since I was making the bacon guacamole on the weekend I figured I would just pick up double the ingredients and make both. The basic idea behind this grilled cheese is quite simple and it started out with just adding guacamole to a grilled cheese but with the success of combining salty bacon-y magnificence with cool and creamy guacamole I could not resist adding a few slices of bacon to the sandwich. I also had some leftover corn tortilla chips from dipping on the weekend so I decided to crumble a few of them and add them to the sandwich for texture.

Baked Egg Cups Even though I have had some rough egg experiences lately…the century egg, and little birdie fetus…I have not given up on one of my favorite foods. While eggs can be made to taste more disgusting than I ever thought possible, they can also be creamy, protein packed perfection and in the case of the baked egg cup, they are just that! The other morning, we had our friend Zach and one of his friends over for breakfast. Zach was our travel partner in Cambodia, and he is moving to South Africa on Monday, so we are trying to soak up as much Zach time as possible! Gavin made some delicious whole wheat banana’s foster pancakes (I think I should enlist him has a guest blogger to share his pancake secrets!) and I made baked eggs in ham cups.

Skinny Mashed Potatoes Mashed potatoes are one of my favorite things to eat on Thanksgiving, but this year since I am pregnant and on a really strict low carb diet (for my diabetes) real mashed potatoes are out (bummer). I recently started researching alternatives to some of my favorite dishes because there is NO way my plate will be without a big ole pile of mash potatoes. I came across this recipe that uses cauliflower instead of potatoes. Hmmm not a big cauliflower fan so I wasn't sure. chopped salad with feta, lime and mint I’m sorry, guys, but I get really boring in the summer. Like, hey-isn’t-it-nice-when-the-sun-shines boring. Or, let-me-tell-you-about-that-time-I-got-the-apartment-painted boring. Okay fine, I’ll tell you anyway.

Oven Baked Salmon - A Spicy Perspective Spicy Garlic Lime Baked Salmon Spicy zesty oven baked salmon with loads of flavor and minimal effort… just my kind of weekend dinner. Yet this baked salmon is elegant enough to serve at your next dinner party. Salmon is sort of my go-to fish.

Avocado Fries Oh dear. I never should have done this. This may be one of my biggest mistakes all year. Can’t take it back now. Scottish Farmhouse Eggs Decided to mix things up and do a recipe. This is one I’ve made forever and I’m not 100% positive where I picked it up. It is always a crowd pleaser for brunch or breakfast. Special thank you to Dawnland Mama for the farm fresh duck eggs (even though she is a vegan herself).

Nobu's Miso-Marinated Black Cod There are many reasons to love black cod — it is sustainably fished, full of healthy omega-3 fatty acids, and wonderfully buttery when cooked. Here's one more: a classic Japanese recipe for black cod that makes an easy, elegant dinner for guests or a quick main dish you can prep over the weekend. This recipe is adapted from Nobu: The Cookbook, which my partner gifted to me many years ago after we visited Nobu's restaurant and swooned over the omakase tasting menu. It's a very simple dish; there is some advance preparation, but it's easy and quick. Quinoa Salad with Mango, Avocado, & Tomatoes Black Quinoa Salad with Mango, Avocado, & Tomatoes Last week I made a Black Quinoa Salad with Mango, Avocado, and Tomatoes. Josh absolutely loved the salad. He can’t stop talking about it. He has been bugging me for a week to post the recipe. He said everyone needs this recipe!

In another separate bowl, combine panko bread crumbs with parsley flakes. TO ASSEMBLE: One by one, roll mozzarella sticks in flour, then dunk in egg/milk mixture, then place in panko crumbs. Use your hand to sweep crumbs all over the mozzarella stick.

How to Stop an Avocado Going Brown Updated April 03, 2015. Avocado has to be one of the most popular - and particularly healthy fruits - in the kitchen, its uses are endless. Unfortunately, using an avocado means leaving it until the last minute because once cut, the surface of the fruit quickly turns brown. There are several solutions to this problem. Weekday Vegetarian: Linguine with Smoky Avocado Sauce Photo: Kelly Rossiter/CC BY 2.0 Grilling avocados seems to be all the rage these days, and I finally tried it. It took me a while to get accustomed to the idea, because I always think of avocados as a cool, creamy treat, but I have to admit that I was pleasantly surprised.
