Zesty Lime Shrimp and Avocado Salad

Zesty Lime Shrimp and Avocado Salad
Zesty lime juice and cilantro are the key ingredients to creating this light and refreshing salad, no heavy mayonnaise to weigh it down. Made with the freshest ingredients; jumbo shrimp, avocados, tomatoes, red onion, cilantro and chopped jalapeño tossed with some freshly squeezed lime juice and a touch of olive oil. This will be a huge hit at your Cinco de Mayo fiesta or summer bash! Serve this as is for an appetizer, or over lettuce o tostadas for a lunch or light meal. You can easily adapt this to suit your taste by adding more or less cilantro, jalapeño etc. If you plan on making this ahead of time, you can combine all the ingredients except for the avocado and cilantro and keep this refrigerated, then add them right before serving. Shrimp is low in fat and calories, but tends to be naturally high in sodium so if you are on a restricted sodium diet, you may want to limit your shrimp intake. In a large bowl combine chopped shrimp, avocado, tomato, jalapeño. Makes 3 1/2 cups.

Bacon Guacamole Grilled Cheese Sandwich A guacamole grilled cheese sandwich has been on my to try list for a while now and since I was making the bacon guacamole on the weekend I figured I would just pick up double the ingredients and make both. The basic idea behind this grilled cheese is quite simple and it started out with just adding guacamole to a grilled cheese but with the success of combining salty bacon-y magnificence with cool and creamy guacamole I could not resist adding a few slices of bacon to the sandwich. I also had some leftover corn tortilla chips from dipping on the weekend so I decided to crumble a few of them and add them to the sandwich for texture.

Recipe: Lindsey Bareham’s tomato, avocado and mozzarella In the days before the River Café, there were a clutch of fashionable Italian restaurants in London and they all served insalata tricolore. I don’t know who invented this edible Italian flag, but it spread like wildfire through the dinner party circuit, every interpretation different depending on the artistry and shopping skills of the cook. Buffalo mozzarella, firm but ripe avocados, peppery Tuscan olive oil and decent tomatoes are all vital, but exactly how you fashion it is up to you. Sometimes I peel the tomatoes but not today.

Prawn, prosciutto and rosemary skewers recipe - BBC Food For the salsa, toss the avocado slices gently in a bowl with the lime juice. Add the tomatoes, spring onions, chillies, ginger and olive oil. Reserve a small handful of coriander (or basil) leaves for garnishing, tear up the remainder and add to the bowl with salt and pepper to taste. Stir everything gently together to keep the avocadoes from going too mushy. Prawn jamon souvlaki Not your classic souvlaki but again I’m having fun with it, and I’ve always loved the combination of jamon and prawns.
