Lemon Ricotta Pancakes I’m not sure why my tastebuds so closely associate lemon with spring – citrus is a winter fruit, after all, but its brightness I suppose reminds me of the sun coming out again. Lemon ricotta pancakes seem to be particularly springy – maybe because brunch becomes more common once the ground starts to thaw, with longer days, Easter and baby showers and people more eager to leave their houses and get together. Spring weekend mornings beg for pancakes. With a sweet-tart citrus kick and a light spring in their step, these lemon ricotta pancakes are a celebratory step up from the usual. Grate the lemon zest as finely as you can to maximize flavor and avoid bits of zest in your pancakes. Ricotta cheese adds richness as well as a light airiness; light ricotta works fine, but use the real thing if you really want to do breakfast up right.

Valentine's Day Monster Cookies We all have those days - the ones where nothing seems to go right and each frustration is followed by another. The days that drag on forever with no end in sight. It is equally frustrating when these inevitable days happen to a loved one, leaving me helpless to offer better advice than, “Life sucks sometimes. Make Your Own: Candy There’s a reason why they put all that deliciously sweet candy up by the cash registers in nearly every store: if you had to find it at the back of the place, you’d likely decide against it before you got up front to pay. But you’re an adult, and once a child sets their sights on a candy bar, there’s no turning back. Chocolate Éclairs by Pierre Hermé Recipe Making pâte à choux has always been intimidating but now that I’ve tried it once, I can’t wait to use it again. Gazing at the colorful options behind glass display cases in local pastry shops, I’m thinking, “I can’t make any of this.” Now I can proudly cross out éclairs, cream puffs, profiteroles, and Paris-Brest out of The Long List of Things I Can’t Must Make. The pastry dough is cooked twice, first on the stovetop to create a paste and then finished in the oven after piping the desired shape. Choux is French for “cabbage,” referring to the irregular shape that a round piece of pâte à choux takes.

Easy Raspberry Lemonade Easy Raspberry Lemonade I just can’t get enough fresh lemonade in the summer. It’s so fun to make with my son, and so easy. I sit him on the counter and he helps squeeze the lemons. Chocolate Chip Cookie Dough Truffles I think it is safe to say that most of us have eaten our fair share of raw cookie dough. When I was a kid, my mother would purchase cookie dough balls from our school Market Day program. I think I ate more dough balls than freshly baked cookies:) However, with the safety issues of raw egg consumption, recipes have been created for us to have our raw cookie dough and eat it too. The only way to make it better is to cover it in chocolate--yum! Many recipes for cookie dough truffles call for sweetened condensed milk.
