I've been working with Chia a lot lately and it's just wonderful in this bread. It makes for moist crumb and it's so easy to slice for sandwiches...Did you know that a chia seed can absorb more than twelve times its own weight in water? When eaten, the gel that forms in the stomach creates a physical barrier between carbohydrates and the digestive enzymes. This prolongs the time it takes our bodies to break down the carbs into sugar, which helps stabilize our metabolism! Garlic Bread-Machine Bread Recipe [Vegan/Gluten Free] - Make Real Food.

During the month of May my bosses-bosses-boss had a meeting with all of us, and told us that we were required to take 40 hours of paid-time-off before September.

He hoped this would give us a break after a terribly stressful May/June. Really I think they just wanted to get some PDOs off the books before year end, but regardless…this past week was my ’40 hours’. We went back and forth as to if we were going to go out of town or not. Originally we had a grand plan to fly all over the country to look at PhD programs for Nathan, but geez flights are expensive! Then we thought about going to the coast for a few days, but apparently that is something you need to plan a few months in advance (or at least more than 2 weeks in advance).

So, all of this is just a really long way of saying – we decided to have a staycation. Mainly, we enjoyed each others company, which is exactly what we needed. And, alas, tomorrow I will have to return to work. 40 hours off was an excellent idea. NO KNEAD MULTI-GRAIN DINNER ROLLS  Totally Addictive Cornbread. This healthy cornbread is completely flourless!

Totally Addictive Cornbread

Southern Comfort Food If you were to peek inside the kitchen pantry of my childhood, I guarantee you’d find at least one box of Jiffy corn muffin mix. Although we rarely ate packaged foods (my mom preferred to cook from scratch), the Jiffy mix was an exception. Now that I’m grown up and living on my own, I haven’t bought Jiffy in years. The mix is neither healthy nor vegan.

However, I craved it when I made my Sweet Potato Chili. With temperatures dipping into the 20s, last week was a perfect time to experiment and create a healthy cornbread recipe. Buttermilk Cornbread. This slightly sweet and tender cornbread is the perfect side dish for your Thanksgiving meal!

Buttermilk Cornbread

My family is from the South, Louisiana to be exact, and every year during my childhood we traveled down there during the summer to visit my grandparents. It's safe to say that's one of the reasons I love food so much today. My grandma cooked everything from scratch and in true southern form, she loved to cook with butter.I can remember eating catfish, hush puppies, fresh tomatoes and peppers from her garden and, of course, cornbread.

Buckwheat & Chia Bread : The Healthy Chef – Teresa Cutter

I love pairing this buckwheat and chia loaf with a nourishing soup for lunch, or a purely delicious salad for dinner. It works well for breakfast too, topped with fresh sliced avocado and Persian feta, or my homemade macadamia butter and a little Manuka honey. Instead of using buckwheat flour, I blend pre-soaked buckwheat for a few seconds into a batter, pulsing until it’s a little creamy. What’s great about it: Buckwheat is a seed related to rhubarb.

Makes 1 loaf 300 g (10 1/2 oz / 1 3/4 cups) whole raw buckwheat groats 60 g (2 fl oz / 1/4 cup) whole chia seed 250 ml / 1 cup water (use half to soak chia seeds and the other half to combine in the food processor or blender) 60 ml ( 2 fl oz / ¼ cup ) olive oil 1/2 teaspoon bicarb soda (or 1 1/2 teaspoons gluten free baking powder) 1/2 teaspoon sea salt juice from ½ lemon (if using bicarb) Paleo Pumpkin Bread : The Healthy Chef – Teresa Cutter. What I love about them is that they are wonderfully sweet and juicy to eat so they are the perfect ingredient to make my purely delicious apple + cinnamon bread. This is the sort of no fuss – one bowl style of bread that can easily be whipped up in around 10 minutes. Your whole kitchen will smell amazing when it’s being baked as the cinnamon apple spice floats through the air. Gluten Free Bread : The Healthy Chef – Teresa Cutter.
