Whenever I called her for the recipe, she would say stuff like, "Add flour until it looks about like the consistency of ketchup, or maybe a little thinner." Well, that's all fine and good if you know what "ketchup or maybe a little thinner" looks like, and I can't blame her because if I didn't force myself to write down measurements every recipe on this blog would look like that. I want my banana bread to be EXACTLY like Grandma's. So, one day, I went to Grandma's house, got out her recipe, and made her sit down and translate it with me. "I guess I usually use 3 bananas so you can cross out that 1 1/2 cups" "Well, this says 1/2 teaspoon of vanilla, but of course I add at least a teaspoon." And if you're Grandma, you wouldn't have to dirty anything.

Margarita Cupcakes After an exhaustive (in a good way) search for margarita cupcakes on flickr, I noticed that tons of people were crediting “VCTOTW” as their recipe source, which was a bit perplexing at first. Google came through as always though and quickly helped me decipher the strange code – which turned out to be shorthand for the title “Vegan Cupcakes Take Over the World“. I’m not a vegan myself, but I did notice that this book happens to have a shiny 5-star rating from over 200 reviewers on Amazon (in addition to great reviews on this particular recipe), and I’m definitely intrigued… All 4 of the margarita cupcake images pictured here credit VCTOTW as their recipe source (get the recipe below) – but a couple of the bakers that aren’t vegan substituted real butter & milk for the shortening & soymilk. Apple Streusel Muffin I made these muffins almost a month ago and just thinking about them again is making me sooooo hungry. I would really love to have one (or two) of these right now and if I had any applesauce in the house I would be downstairs whipping up a batch instead of writing this post. This actually happens to me often when I have stock piled recipes to blog about but my life has been too crazy to get around to writing for awhile. So when I do finally have a chance to sit down and write I end up really craving that food again. This December has felt especially busy with the shorter than normal time period between Thanksgiving and Christmas. So now that the holidays have gone by for another year and K and I have this nice break from work, we are going to get started preparing the nursery for our baby boy. Sorry, I got a little side tracked there...back to the delicious-ness of these muffins. Apple Streusel Muffins Muffins Streusel Glaze 1/2 cup powdered sugar 1 tsp vanilla 1-2 tsp water or milk Enjoy!

Snickerdoodle Muffins Last Friday I finished my exams and was planning on coming home and having a baking extravaganza, but then I tripped on my cat and fell down the stairs. We're both fine, though I think he's a lot more fine than me because as soon as I felt his soft body under my foot I took all my weight off of him and slid down the stairs. Which has left me with a swollen foot. But since I was so looking forward to baking, I made a couple of more simple things, chocolate pots de creme and eggnog cheesecake bars. I recently discovered the insane deliciousness of snickerdoodle cookies. As for how they turned out, the muffins were incredibly moist and a great sour cream muffin texture.
