If you told me 5 years ago that my coffee table would not only host my own cookbook, but also a cookbook written by a friend of mine, it wouldn't even be something that my brain could grasp and I would probably just laugh it off. But here we are, and that sentence is a reality. Nick from Macheesmo was a once rival, turned friend and also powerful ally in the world of food blogging, and his book Love your Leftovers, comes out in a few days! Love your Leftovers is an epic tome of meal planning that teaches you how to cook in large batches and then repurpose the leftovers into dinners later in the week. Nick is modest on the cover when he says there are "over 100" recipes in the book, because many of the recipes feature variations and twists with full ingredient lists. I asked him what the true recipe count was, and he said it comes to 187!!!

Tuscan Garlic Chicken Oh my sweet darling husband. If you covered a flip flop with a cream sauce, he would probably love it. So naturally, I had high hopes for this recipe. Magic Sauce Recipe I call this the magic sauce recipe. In part, because it makes everything it touches shimmer with deliciousness. It's magic like that. Technically, it's a riff on a chimichurri sauce - one that veered off the rails in a big way. Guinness Braised Shortribs The rest of this great meal was Guinness braised short ribs, and potato-celery root horseradish mash. These 3 components went amazingly well together, tied with guinness, thyme and balsamic. This was a classic meat and potatoes, but it was elevated to steakhouse quality with simple tweaks and flavors. The meat was so tender and fell apart on your fork. The creamy mashed potatoes and flavorful onions were perfect compliments to the beef. Jalapeno Artichoke Party Dip This dip has many uses. Most of the time, it is an appetizer, served with tortilla chips. However, it is equally good served with carrot and celery sticks, makes a lovely burger spread, and really jazzes up a wrap sandwich.
