THE SIMPLE VEGANISTA: MASHED CHICKPEA SALAD. Since I eat this salad all the time, I figured it was time to post it here. This is one of my favorite to go lunches lately. It reminds me of a potato or egg salad. I typically serve this on a bed of chopped romaine or sometimes arugula. Jamaican Jerk Chicken with Jamaican Red Beans and Rice was inspired by our tropical island vacation. Ben and I are still riding our post-vacation high!
We’ve been reminiscing about ridiculously attractive brother and sister, afraid of the water guy, and hot Italians in small bikinis from our hotel, Ben’s been complimenting me on how “rasta” my cooking smells, and I’ve been very laid back in my requests such as, hey mon, can you come pick up your clothes from the living room floor, mon? Much love! Instead of, listen, you really need to get your crap out here or I’m going to go completely bananas. Kidding! Before we come back down to earth though, and start eating things like cheese and skittles again (Jamaican food is very healthy!) Ben and I were both amped to try authentic jerk chicken upon our arrival in Jamaica, and practically whooped out loud after learning there was a jerk chicken shack located RIGHT on the beach of our hotel, and that it was open for lunch everyday.
Anyways! Sweet Potato Gnocchi. I quickly emailed my recipe for homemade gnocchi to Jill last week, certain she could master a version made with sweet potatoes. I knew I had given the task to the right woman because after two attempts, she’s made a version of sweet potato gnocchi that looks absolutely perfect. Thanks, Jill! -Maggie This is utterly delicious. It’s just fluffy morsels of sweet potato tossed in fried sage and brown butter, and it’s wonderful. I made it last week as a side dish for our Canadian Thanksgiving, but I was distracted and didn’t watch them as they over-cooked and boiled into a pile of orange mush. Despite being mush, it was still very good and we ate it anyways. Still, I was committed to making it work. Don’t let the thought of having to make gnocchi from scratch stop you from trying this recipe. Originally, three sweet potatoes were baked in our earth oven. Whether you wrap in foil and bake, or wrap in plastic and nuke for a few minutes, it all comes out fine.

Negative media coverage in the recent past hasn’t done it any favours – all too often beetroot has been associated with harsh-tasting vinegary pickles. What to look for Sweet, succulent and adaptable, beetroot adds colour and vibrant flavour to dishes.
Small beetroot, often known as baby beets, have a particularly delicate flavour. Choose firm bulbs with fresh, green leafy tops. The stalks are pleasantly astringent and cooked in the same way as spring greens or spinach. If the skin is damaged, the colour bleeds out from the beetroot while it cooks – so do look for unblemished beets. It’s best to steer clear of beetroot larger than 6cm in diameter - they may have a tough woody core. Golden beetroot used to be popular in the nineteenth century, and is currently enjoying a revival in upmarket restaurants.
Baking is the best way to develop its true flavour, and is especially suited to larger bulbs. Find recipes online. Share them with your friends. | FOODILY. Eat Blog Sleep » Blog Archive » Easy Supper … The last thing I feel like doing on a Friday night is cooking up a complicated dinner, but the thought of a stodgy Chinese takeaway or even worse, Pizza Hut, is enough to make me lose my appetite altogether, so I often find myself whipping up a quick fish dish. To me, fish is the ultimate fast food. It can be on the table within a matter of minutes and is tasty and good for you too. There isn’t really much of a recipe for this dish, it’s really just a matter of throwing whatever you have in the fridge together, but I will make one up for the sake of those of you who prefer to follow a recipe.
