I've decided not to buy any bread - firstly, because I'm not too keen on shop bought bread, and secondly, we eat so much bread in this house, I figure it's a lot cheaper to make it. But when time has run out these flatbreads are amazing. They take hardly anytime to make and lunch is so much nicer with these fresh and warm flatbreads - better than the usual rubbish you'd buy from the supermarket. Ingredients: 250g plain flour 1 teaspoon fine sea salt 1 tablespoon rapeseed or olive oil 150ml warm water HOW TO MAKE: Sift the flour into a large bowl and add the salt. Turn out onto a floured work surface and knead for about 5 minutes, until the dough feels smooth and elastic. When you are ready to cook and eat the flatbreads, roll the dough into a sausage shape and divide into 8 balls. Shake off any excess flour and carefully lay a flatbread in the hot pan.

It’s tough some days, especially when we have boys’ activities that go through the late afternoon and evenings. The unhealthy, fast choices are so tempting. Even at home, I’ll admit to popping frozen bean burritos in the microwave and adding a salad to “even it out” is sometimes an option. My answer to this is to stock the freezer with frozen seafood. The pantry always holds cans of coconut milk, cartons of broth and dried rice noodles – making this recipe very convenient to cook. Everything Bagels Elsie has been requesting bagels for a few weeks now. It's been quite some time since I last made bagels. Here's why: they are very addictive! My all time favorite is blueberry bagels, but a very close second is everything bagels. :) What's sort of strange about making bagels is you have to boil the dough before baking. Everything Bagels, makes 8 1 1/4 cup warm water1 1/2 tablespoon sugar2 teaspoons (one package) active dry yeast3 1/2 cups bread flour1 1/2 teaspoons salt2 tablespoons sesame seeds (I used both black and white)2 teaspoons poppy seeds1 teaspoon caraway seeds1 teaspoon coarse grain sea salt1 egg In a bowl, combine the water and sugar and stir to dissolve. Turn the dough out onto a lightly floured surface and divide into eight equal pieces. Whisk the egg plus 1 teaspoon water in a small bowl and brush this over each bagel. Eureka! Serve these with cream cheese at breakfast or make a bagel sandwich for lunch. :) Enjoy!
