From yogurt to muffins, I relish this tasty flavor of Fall. If you're looking for a pumpkin pie alternative, these pumpkin-carrot bars are delish. The bit of cream cheese frosting adds a deceptive element of decadence. Low in calories while remaining full of flavor, these pumpkin bars make a great dessert — perfect for potlucks (much easier to share with large groups than pies) and they're relatively guilt-free.

They're high in vitamin A — and trust me you cannot even taste the shredded carrot — and a bar only contains 70 calories and less than two grams of fat. Check out the recipe when you read more. Ingredients 2 cups whole wheat pastry flour 2 teaspoons pumpkin pie spice 2 teaspoons baking powder 1 teaspoon baking soda 1 cup sugar 1/2 cup brown sugar 1/3 cup Earth Balance (or other butter substitute) 2 eggs 2 large egg whites 1 can (15 oz.) pumpkin pie filling 2/3 cup finely shredded carrot Directions. My Mum was an incredible baker and, like so many women of her generation in Ireland and England, one of her best recipes was for a Victoria Sponge.

Mum used to follow the tried and tested 4, 4, 4, and 2 method ~ aka in 4 ounces butter, 4 ounces sugar, 4 ounces flour and 2 eggs as when my Mum was growing up in Ireland imperial measurements were the standard. I have used this same ratio in this cake but upped the quantities somewhat to provide more batter. I am also somewhat in an Italian frame of mind at the moment, as I have just started booking hotels in Italy for my trip there this coming July (woohoo!) , so I put a little Italian slant on this cake using two of my favourite cooking ingredients ~ balsamic vinegar and Italian Limoncello liqueur.

Doesn’t the very phrase itself, “sunshine in a jar,” roll off your tongue and fill your mouth with magic? While I’ve never yet found myself a sunshine in a jar, I think we may have just concocted it in our kitchen tonight. They have the most advanced technologies, they are forward thinking in so many ways, they have the most amazing sense of packaging (and design), their sense of honour, family and culture is extremely strong, and in light of the recent tsunami disasters – they are the most resilient and united people in the world! I would love to visit Japan one day soon. Now that we’re back on this side of the globe, that dream is so much more possible. It is still an expensive place to visit, but it’s on the list. We’re working on it. I haven’t tried many Japanese recipes to date, something I should rectify. It’s dangerous because it’s so easy to forget that you’re eating a cheesecake. It’s fun to bake – however this time round my cake puffed up a lot during baking and when it cooled, it shrank back and caused the top to go all wrinkly.

My friend laney cooked up these killer s'more brownies for bookclub the other night and all the ladies went back for more. i had to hurry and make them again, for the fetus' sake. simple to make, ooey and gooey and delicsh. benji pounded a piece during a glowstick enhanced past-bedtime soccer game. these are getting me in the mood to sleep under the stars at the big family camp-out next week. can you believe the fourth of july is right around the corner?!

Spread into a greased foil-lined 9x13 inch pan.In a medium bowl, break graham crackers into 1 inch pieces and toss with miniature marshmallows and milk chocolate.
