What I love about this one is that it’s so simple that your kids can easily make it. Say, a large party, one with lots of guests. The kinds of guests you want to impress, but are svelte health-conscious types, so you don’t want to go overboard with dessert and serve a seven-layer chocolate cake or something. This. Strawberry Crostata. Now I Can Die Happy. The other day I was browsing Foodgawker trying to decide what to make for Father’s Day dinner and I came across a gorgeous picture for a Strawberry Crostata and knew that I had found my dessert.

I don’t make a lot of fruit desserts or pies, so I wasn’t sure what to expect out of this, but I needn’t have worried. This turned out delicious and nobody even knew that I used a store bought pie crust. Until now. Darn it. Let’s make this, shall we? First things first, hull and slice 1 1/2 pounds of ripe, juicy strawberries. Grab 8 ounces of softened cream cheese and mix it up with 2 tablespoons of flour, 2 tablespoons of sugar, and 1 tablespoon of vanilla. Now, either make a pie crust or buy it in a box at the grocery store. Lay your pie crust flat on a baking sheet lined with parchment paper. Pile your strawberries on top. You’ll have quite a pile of berries, but they’ll bake down. Work your way around the crust and fold the edges over about every inch or so. Well, this is how they turned out: A messy, sugary, sloppy mess. They also tasted not so great. So, I decided to share a simple favorite of ours, chocolate chip muffins. Now, these aren't just ordinary muffins. Margarita Cupcakes. Happy Cinco de Mayo!

The one day a year when we can stuff ourselves full of chips, salsa, guacamole and margaritas. It’s a little bit of a foodie nirvana. Of course there is historical significance to the day, which I shared in my homemade restaurant style salsa post. But like most holidays that celebrate a heritage, people enjoy celebrating Cinco de Mayo with authentic food and drink. I for one love Mexican food and am looking forward to chowing down on chips and salsa for at least one meal and then washing it down with one (or two) of these cupcakes.

Tequila and lime? They say you should only cook with wine that is good enough to drink, and I hold the same belief when it comes to liquor and baking, so I decided that these cupcakes called for Patrón Silver tequila. I did some web surfing to see what I could find in the way of margarita cupcakes, and unfortunately came across a ton of recipes that used a box cake mix. Yet they look so innocent, don’t they?
