The Wanna be Country Girl

The Wanna be Country Girl
This hash-brown casserole is the perfect side dish. I served it last night with my chicken pot pie to a crowd. It’s cheesy comfort food at its best. The parmesan gives it a tangy flavor, and best of all it’s really easy to fix. Its got five ingredients you mix together and pop it in the oven. Start out by adding 1 – 32 ounce bag of hash-browns to a large mixing bowl. Next add 2 – 10 3/4 ounce cans of cream of potato soup. Followed by 16 ounces of sour cream. Now comes the cheesy part. And 1 cup of fresh grated parmesan cheese. Next add a good-sized pinch of salt and pepper, and that’s it. Put the mixture into a buttered Pyrex. Run this wonderful concoction into a pre-heated oven at 350′ for 1 hour See…..brown and crunchy. You may wonder why I’ve taken such a close-up picture. It’s because I almost forgot to take a photo at all. Enjoy! the wanna be country girl – Caroline

Chicken Parmigiana This is one of the go-to dishes I make for my family of six. Rich, flavorful, and totally satisfying, we all love it, including my big, strapping cowboy of a husband. And that’s a very, very good thing. Tzatziki - Cucumber Yogurt Dip Cool and creamy, this tangy cucumber dip flavored with garlic is the perfect compliment to grilled meats and vegetables. It's served on the side with warm pita bread triangles for dipping, and is also used as a condiment for souvlaki. Portuguese Fry Bread Recipe This is very similar to a yeasted fry bread. It uses baking powder for leavening instead of yeast. It is best served hot and we think with syrup or jam. Fluffy Pancakes This pancake recipe is the result of mixing and matching different recipes from many different sources. It is the result of trying and failing so many times, that I almost declared pancakes as the one breakfast recipe I couldn’t master. But I persisted, and this recipe is perfect – as perfect as a pancakes recipe can be, because making pancakes does involve frying, and frying is something that each of us needs to play with.

Potatoes Romanoff - A Fancy Twice Baked Potato - StumbleUpon I’m totally ready for fall. I’m ready for super comforting meals that I get to eat while sitting at home, in my sweat pants, with my slippers on! And I’m ready for Thanksgiving. Too soon perhaps? Considering the fact that it’s still about 80 degrees here in LA, I guess this Potato Romanoff dish will have to do

Recipe: Black Bean and Beef Chili Are you sufficiently tired of turkey and Thanksgiving leftovers? I’m finishing up the sweet potato casserole for breakfast as I type this. I have a decidedly non-holiday dinner recipe for you today if you’re looking for a break from turkey pot pie, turkey tetrazzini and turkey soup. The night before Thanksgiving, as I was chopping and cooking away, it occurred to me that I needed to feed my family dinner.
