This hash-brown casserole is the perfect side dish. I served it last night with my chicken pot pie to a crowd. It’s cheesy comfort food at its best. The parmesan gives it a tangy flavor, and best of all it’s really easy to fix. Start out by adding 1 – 32 ounce bag of hash-browns to a large mixing bowl. Next add 2 – 10 3/4 ounce cans of cream of potato soup. Followed by 16 ounces of sour cream. Now comes the cheesy part. And 1 cup of fresh grated parmesan cheese. Next add a good-sized pinch of salt and pepper, and that’s it. Put the mixture into a buttered Pyrex. Run this wonderful concoction into a pre-heated oven at 350′ for 1 hour See…..brown and crunchy. My Favorite Pancake Recipe We've all had blueberry pancakes with maple syrup, and pancakes with blueberry syrup, but what about a tall stack of golden butter-kissed pancakes with blueberry maple syrup? I'm going to go out on a limb and say these Whole-Grain Pancakes with Blueberry Maple Syrup are the best pancakes I've ever made, my favorite pancake recipe to date. The pancakes are fluffy and golden and light, and the blueberry syrup is delicious, fragrant and beautiful without being overly sweet. I've been playing around quite a lot recently with white whole wheat flour. The whole blueberry maple syrup is perfectly delicious and great when fresh blueberries come into season. This recipe was originally posted in late summer - as I'm reposting it from the archives it is now December and I'm imagining these pancakese would be delicious with cranberries swapped in for the blueberries in the original recipe. - More Breakfast / Brunch Recipes - Serve with a golden pat of butter and plenty of blueberries and syrup.

Chicken Parmigiana This is one of the go-to dishes I make for my family of six. Rich, flavorful, and totally satisfying, we all love it, including my big, strapping cowboy of a husband. And that’s a very, very good thing. Break out the good Parmesan for this one, my friends. Begin with four to six boneless, skinless, trimmed chicken breasts. I’m actually beginning to believe fear of raw chicken is a diagnosable phobia. Place the chicken breasts inside of a Ziploc bag—either one at a time or, if the bag is gigantic like this one, all at once. I put them inside Ziplocs so that when I pound the heck out of them here in a second, microscopic particles of raw chicken will not end up across the room on my computer’s keyboard. Now THAT would gross me out the door. Pound the chicken with the smooth side of a mallet. You want them to be very thin–about 1/8 to 1/4″ thick. Add the flour to a large plate. And pepper. Then season the other side. The raw chicken is almost over. Now it’s ready to cook! And butter. Mmmm. Oh!

While you can’t really taste the beer in the cupcakes (it serves as more of a flavor enhancer for the chocolate), you can definitely taste the alcohol in the filling and the frosting. Even if we're the only ones who find ourselves testing recipes far later than most, time had no effect on our senses when we declared Candied Salted Bacon to be the greatest thing since sliced bread. It's a super easy treat that is perfect for any array of things. The quality of bacon used is the key to making the end result as triumphant as it should be. Candied Salted BaconYields: 8-12 pieces (depending on package size) 1 package center cut bacon3/4 cup light brown sugarKosher salt to taste The oven method works best for this treat, simply line a cookie sheet (with sides) with parchment paper or silpat in preparation. Peanut Butter Pretzel Bites recipe courtesy Calorie estimate: 4,000 – 5,000 for complete recipe (depending upon dipping chocolate and pretzels used, etc.) Yield 60 – 80 pretzel bites Ingredients 1 cup creamy peanut butter 2 tbsp softened butter 1/2 cup powdered sugar (maybe more) 3/4 cup brown sugar (maybe more) Pretzels 1 bag semi-sweet chocolate chips Directions Combine peanut butter and softened butter in a large bowl with a fork or whisk, or in a stand mixer. Use a teaspoon measure to scoop the filling. Pour the chocolate chips into a microwave safe bowl and heat at 30-second intervals, stirring occasionally until completely melted.
