This site has been my brainchild for just a little while now, but it’s really been in the making for long time because I’ve always loved minimalist baking I just never called it that.
One day a few months ago I started to envision a place where I could share only my favorite recipes that gushed simple. In short, this site embodies everything I adore about food – its simplicity, its beauty, its delicious taste, and its joy-giving nature. If there’s one thing you should know about me right up front it’s that I love pancakes, always have. In case you can’t tell, that is indeed a 10 pound bag of blueberries. Yes, that’s right – 10 pounds. An acquaintance of ours recently started up a CSA , and as avid supporters of local agriculture, Andrew and I jumped at the chance to buy some of her abundant supply of blueberries. This is one of our favorite ways to enjoy raspberries. Yield: 9 big muffins Ingredients: 1 & 1/2 cups all-purpose flour 3/4 cup white sugar 2 teaspoons baking powder 1/4 teaspoon salt 1 teaspoon grated lemon zest 1/2 cup plain soy yogurt 3 tbs. vegetable oil 1 tbs. lemon juice 2 egg replacements 1/2 teaspoon lemon extract (optional) 1 cup raspberries (fresh are best, otherwise frozen) 2 tbs. white sugar for decoration (optional) Directions: Preheat the oven to 400 degrees F (200 degrees C). Homemade bagels are definitely one of them. Why would I bother making bagels if I lived in a city that had great bagels on every corner? Here in Bermuda there aren't many bagel options and there is only one place that doesn't use frozen ones. I looked at a few recipes before making these for the first time. We were going to make the more complicated one (as we usually do) but after falling asleep on the couch a few times over the weekend we never did the night before prep work. It was a very dense yet soft dough. We halfed the recipe to make 6 bagels. It's best to make a smooth ball and then poke a hole through it rather than rolling out a log and trying to connect it.
Making the onion topping. We like everything bagels. Salt and pepper added to the previous ingredients. Just like pretzels, bagels are boiled before baking. Lots of cornmeal to prevent sticking. Yum.
