Once more that almond feta has come in to replicate one of my all time favourite vegetarian dishes - spanakopita. If I do say so myself I used to make the best spanakopita, but as it was full of feta and eggs a no-go having gone vegan. Further, like the couscous salad below, it needed the feta. This isn't just as good as my old recipe, it's better. Seriously. Spanakopita serves 6 550g fresh spinach, tough stems removedabout 150g filo pastry1 recipe almond feta - omit the drizzle oil1 large onion, chopped1 Tbsp extra virgin olive oil50g vegan margarine, meltedfreshly ground black pepperFirst you need to wash and reduce the bulk of the spinach. Put the spinach into your (clean!) That's just one of the above bowls barely 1/4 full. Now heat up the olive oil in a large frying pan, add the onion and about 20 grinds of black pepper. Scrape the fried onion into the bowl with the spinach and crumble in the feta.

I wanted to try and create a healthy version of this traditional Greek dish with little to no-oil and make it vegan. Removing the feta and olive oil seems somewhat sacrilegious, it’s such a staple of the traditional recipe and Greek cooking! However, you are not even going to miss it with my version of this recipe. I have added much healthier ingredients and it is full of flavor. You will be singing me praise after you make this – trust me. Sweet Potato Lasagna. As i'm sure a lot of you know, my love for chickpea flour runs deep, deep enough to write an entire cookbook dedicated to it. that's not to say that my affinity for the flour didn't fade. after recipe testing with it for over a year or so, i developed a distaste for it. after i turned in my manuscript, i was somewhat repulsed by its subtle flavor for a good year. each time i went to the grocery store i stocked up on chickpea flour, so when i was done with writing it, i felt a sense of freedom that i could shop without the demand to purchase it. there are still some favorite recipes that i make almost weekly, namely socca. frank loves it. plus, it's an easy meal to pull together with a hearty vegetable for dinner, and (bonus!)
