Great on a hot summer’s day. 4 large sticks of celery 1–2 garlic cloves, peeled 6 tablespoons extra virgin olive oil, plus extra to drizzle if needed juice of 1⁄2 a lime fine salt and freshly ground black pepper 6 thick slices of ciabatta or 1 baguette The most important thing when it comes to a bruschetta is the bread – it should be really hard and crispy. So slice your ciabatta or baguette slices into diagonal slices approximately 1.5cm width. Put 3 sticks of celery and the garlic in a food processor and blend to a purée. Add the oil and lime juice to the puréed celery. Spread each slice of bread with a tablespoon of the celery mixture and garnish with a sprinkling of the finely chopped celery.
