Plus, I love the fact you can be 100 per cent sure of what’s gone into it, and you can spice it the way you like. It's lovely served as a first course or included in a cold-buffet menu. First you need to grill the beef in advance, and for medium-rare give it 2-3 minutes on each side. Be careful not to overcook the steak: it needs to be quite pink, as the lime juice in the dressing 'cooks' the beef a bit further. If you'd prefer to use a ridged grill pan, pre-heat it for 10 minutes, then cook the steak for 1½-2 minutes on each side. The bones for soup, the pan juices for a sauce, the vegetable peelings in a stock. Even pastry trimmings will be baked to nibble at with a cup of coffee as soon as they come from the oven. There is much flavour to be had from a crab shell too, or even that of a bag of prawns or crayfish. To consign them to the bin unused is as wasteful as throwing away the bones of the Sunday roast before you have used them for stock or gravy. Poached eggs with avocado, beetroot and spinach Recipe. I only retrieve the spears from the water or steam when they have passed the vibrant green stage, when they have started to soften a little in colour.

While you wait, cut half of the cheese into small cubes, then slice the rest.

The recipe Pour 600ml of double cream into a saucepan, add 400g of salmon, a little black pepper and a bay leaf and bring almost to the boil. The trick The important thing here is to infuse the cream with the salmon and bay, so leave the fish and bay leaves in the cream to cool a little once the fish is cooked.
