Tips: Any fresh leftover butternut squash can be blanched for a couple of minutes, cooled, flash-frozen on a tray, then put into a labelled resealable freezer bag. To freeze, cool completely, portion up and freeze flat in labelled resealable bags. To freeze the entire dish, line the tins with foil with overhang; once cool, wrap the foil over the top and put into the freezer. Once frozen solid, use the foil to lift out the toad in the hole, wrap with more foil and put into a labelled resealable freezer bag to return to the freezer.

So, I scoured the interweb looking for something that might make good use of my newest kitchen toy. On, I found a recipe for chicken tarragon that sounded promising. I have been wondering what I should cook in it. I found a few nice salmon filets in our trunk freezer that definitely needed to be used, so I decided to throw in whatever ingredients I had at home (which wasn’t much) to make a tasty Romertopf dish. Thankfully I had a few other recipes to guide me on times and so on, but I think that eventually throwing something together without any recipe at all should be quite easy with one of these. The salmon was some of the softest, moistest fish we’ve ever eaten. And although it was a decent cut of fish, I think the majority of the credit goes to the Romertopf.

What is really nice about the Romertopf is that you don’t need to preheat your oven and the cooking time of most dishes is about 30 minutes shorter than with a regular roasting pan. By that definition, the Romertopf clay pot may well be the poster boy for the whole concept. Or, put another way, I can’t understand why every home cook does not own one! Let me explain…There are a rare, few instances in cooking where the better way is actually the easier way.
