Sweet Potato and Pecan Casserole (Recipe)

This Thanksgiving side dish, passed down through my Southern family on my mom's side, proves that sweet potatoes can be comforting and indulgent without moving into marshmallow-topping territory. When I show up to a Thanksgiving celebration with this dish, everyone's first question is, what's pone? Somewhere between a casserole and a custard, sweet potato pone has a consistency that calls to mind bread pudding or cornbread dressing, and the grated potatoes and pecans combine to create a crispy, browned topping. Easy Fall Recipe For The Normandy Calvados Cocktail

The Normandy, as it's called, has cool weather written all over it, with ingredients like cranberries, green apples, and Calvados, a type of French apple brandy from — you guessed it — Normandy. The tipple balances all the elements you'd ever hope for in a drink. It's simultaneously cool and warm, sweet and tart. Despite being incredibly basic, its elegant simplicity has more sophistication than most of today's overthought cocktails.

My only problem? As a girl who’d normally choose a cheese plate over a decadent dessert, I sure have been on a sugar tear lately. Good thing for me, my body has an automatic shut-off mechanism when it comes to sweets. A couple bites are all I can handle before the dreaded sugar headache creeps in. That said, those couple of bites better be good. The original clafoutis (kla-foo-TEE), invented in Limousin, France, was made with cherries.

While I love to stud a good clafoutis batter with fresh fruit, there’s something special about the smooth consistency of this spiced pumpkin version. All that’s needed is a generous drizzle of syrupy orange and vanilla bean compote and dusting of confectioners’ sugar and you’re on your way to a serious fall treat. Ingredients 1 ½ cups 2% milk 3 tablespoons unsalted butter, plus 1 teaspoon 3 large eggs ½ cup cane sugar 1 cup all-purpose flour ½ teaspoon salt 1 cup pumpkin purée 1 tablespoon ground cinnamon ¼ teaspoon ground clove.

Spatchcock + Braise-Roased Herb Butter Turkey recipe on Food52.com. Author Notes: Since I already love Amanda's spatchcock-braise-roast method for cooking chicken, I thought--why not turkey, too? I combined her method with Antonia James's recipe for Spatchcocked Turkey and Tom Colicchio's recipe for Butter-Roasted Turkey. The result is by far and away the best turkey I’ve ever made–the meat is succulent and juicy, the skin is shatter-crisp, and best of all, the bird cooks in about half the time. I cooked my 13-pound turkey in a 14″ x 20″ x 3″ roasting pan, which fit snuggly into my home oven. It was more than enough for 8 people, with plenty of turkey remaining for leftovers.

I cooked my bird for 2 hours 15 minutes.
