Sweet Potato Gnocchi with Gouda Cheese Sauce

Sweet Potato Gnocchi with Gouda Cheese Sauce
This morning I was looking at my home page and I realized that there is a lot of orange sweet potato and pumpkin going on. Considering the time of year I think it is very fitting. Maybe I should go red and green when Christmas comes around? Got any green and red recipes that I can try out for Christmas? In keeping with the autumn orange theme I got the idea to try a sweet potato gnocchi covered in gouda cheese sauce. The idea was to do it in a stovetop mac and cheese kind of style. I have never made a potato gnocchi before. First and most important you need 1 pound of sweet potato. In the photos I as preparing a double recipe so that is why you see so many potatoes. Pierce the potatoes with a fork. Microwave the potato for 5-6 minutes on each side, until tender. Slice the potatoes in half and let cool. Scoop out the flesh of the potatoes and mash, you need 1 1/2 cups of mashed potato. Add Parmesan cheese, brown sugar, 1 teaspoons salt, and nutmeg; mash to blend. You have made a roux! Gnocchi

Cruft: Lasagna Cupcakes When Intelligentsia Coffee opened in Pasadena recently, I was intrigued the lasagna cupcakes they served. The cupcakes are made by Heirloom LA, a catering business. About the size of a muffin, a single lasagna cupcake was a delicious meal. After seeing how much my daughter enjoyed them (she ate my entire cupcake and I had to order a second one), I decided I had to try making them at home. After a bit of research, here is my method. The girls love them and take them to school as lunch.

Watermelonade Recipe at Epicurious.com photo by Roland Bello yield Makes 1 gallon (serves 16) active time 30 min Potato Gratin My favorite dish at this year’s Thanksgiving dinner was this Potato Gratin recipe, courtesy of Frank Stitt’s Southern Table. Stitt’s cookbook has been very reliable, it is also such a beautiful book that I enjoy flipping through it whenever I can. It took some convincing for Bryan to agree to a Thanksgiving dinner with no mashed potatoes, he’s a traditionalist, but after he tasted these he was glad he agreed. Just look at that brown and crunchy and delicious cheese topping! Since this is so easy to make, maybe it will become a good substitute for my macaroni and cheese cravings.

Chicken Stuffed Shells Recipe I love stuffed shells… From Italian and taco stuffed shells all the way to chicken stuffed shells. Chicken stuffed shells are a great way to make good use of left over chicken. I have seen many different recipes all using different methods but I decided to try this one. I prefer Italian flavors over cream of mushrooms soup and such.

Honeyed Pears in Puff Pastry Poaching fruit is one of my favorite things to do when cold weather arrives. It's so warming to stand over a boiling pot of fragrant spices and lose yourself in thought. When I made these, I couldn't help but daydream as I stirred; if I were a pear... I wouldn't want to spend my days on the shelf of a cold produce department. I'd want to be taken to a warm home and placed in a jacuzzi of honey and spices. I'd want to be wrapped in an extra long puff pastry scarf and baked until golden and toasty. Frozen Butterbeer for the Deathly Hallows Premiere - Cook Like a Champion There’s something you might not know about me. I’m a huge fan of the Harry Potter books and movies. I wasn’t always, but once I watched one movie, I was hooked. I was devastated when I found out Eric and I were moving away from Orlando before Wizarding World of Harry Potter opened at Universal’s Islands of Adventure. Luckily, we were able to fly back over the summer and use our season passes one last time. Even though it was incredibly hot and crowded, it was totally worth it to be able to experience a small part of the Harry Potter world.
