Sweet Potato Gnocchi with Gouda Cheese Sauce

Sweet Potato Gnocchi with Gouda Cheese Sauce
This morning I was looking at my home page and I realized that there is a lot of orange sweet potato and pumpkin going on. Considering the time of year I think it is very fitting. Maybe I should go red and green when Christmas comes around? Got any green and red recipes that I can try out for Christmas? In keeping with the autumn orange theme I got the idea to try a sweet potato gnocchi covered in gouda cheese sauce. The idea was to do it in a stovetop mac and cheese kind of style. I have never made a potato gnocchi before. First and most important you need 1 pound of sweet potato. In the photos I as preparing a double recipe so that is why you see so many potatoes. Pierce the potatoes with a fork. Microwave the potato for 5-6 minutes on each side, until tender. Slice the potatoes in half and let cool. Scoop out the flesh of the potatoes and mash, you need 1 1/2 cups of mashed potato. Add Parmesan cheese, brown sugar, 1 teaspoons salt, and nutmeg; mash to blend. You have made a roux! Gnocchi

Cruft: Lasagna Cupcakes When Intelligentsia Coffee opened in Pasadena recently, I was intrigued the lasagna cupcakes they served. The cupcakes are made by Heirloom LA, a catering business. About the size of a muffin, a single lasagna cupcake was a delicious meal. After seeing how much my daughter enjoyed them (she ate my entire cupcake and I had to order a second one), I decided I had to try making them at home. After a bit of research, here is my method. The girls love them and take them to school as lunch.

Paleo Portobello Pizzas Paleo Portobello Pizzas Since the beginning of my Paleo journey, I've tried a few pizza substitutes. My conclusion is that you are missing two big ingredients: cheese and crust. This recipe utilizes some classic pizza flavors and still qualifies for a healthy Paleo diet. Japanese Beef Rolls These beef rolls are so delicious! You can serve them as starters or even as a main course. This dish is definitely on my list for my next party. Smashed Chickpea & Avocado Salad Smashed Chickpea & Avocado Salad Sandwich I’ve never liked egg salad, potato salad, or macaroni salad. Don’t get me wrong, I love salads, just not the mayonnaise based kind. I can’t stand mayo! Well, I recently created a creamy salad that I love and there is no mayonnaise involved.

Greek Garlic-Lemon Potatoes Recipe About a month back, a dear reader Sudha asked me for a Potato recipe which is my all time fav. She said she loved roast potatoes and that which makes it often. She asked me if I had a twist to regular roast potatoes. This recipe "Patates sto Fourno" is a Greek recipe for Garlic and Lemon Potatoes. It is a staple in taverna menus and I read that it is usually served with roasted chicken/grilled fish dishes. One-Pot Caprese Pasta Dinner Recipe One-Pot Caprese Pasta Dinner: It’s all cooked in the same pot! The quickest, most delicious pasta dinner you will ever make! HI! Happiest of Sundays, everyone! You guys. Beet Ravioli w/Macadamia-Tarragon "Cheese" (Paleo AND Vegan) You may, or may not, know this about me, but I was a vegetarian from the age of 10 until about the age of 25 (I can't remember the exact age, but I started incorporating a little fish into my diet around this time). I also love to cook and create beautiful food. So, when a friend of mine asked me to cater a party for her vegan, vegetarian, and pescetarian (fish-eating) friends...I was prepared. One thing that I've discovered (during a short stint with raw-eating) is that there are a lot of raw food recipes that, with a tiny bit of tweaking, are Paleo-friendly. I bought the book, Raw Food Real World by Matthew Kenney and Sarma Melngailis, and though many of the recipes are really involved I've gotten some great inspiration for Paleo-friendly recipes.

Jalapeno Popper Grilled Cheese Sandwich April is National Grilled Cheese Sandwich month and that was all the excuse that I needed to try out some new grilled cheese sandwich recipes! Not too long ago, while I was devouring a batch of the ever so addictive jalapeno popper dip, I was thinking about other ways to enjoy that amazing flavour combination and the idea that stuck was the one for a jalapeno popper grilled cheese sandwich. As soon as I had that thought I knew that I would have to try it and this was the perfect time!

Beyond Pasta: 10 Delicious Polenta and Risotto Dishes Recipe Roundup We are talking Italian cuisine all week, here at The Kitchn, but we admit that it's been a little pasta-heavy so far. So let's turn our attention to the other two starchy dishes that Italians have perfected, and that we love exceedingly: Polenta and risotto. Polenta, of course, is a simple dish made with fine or coarse cornmeal (you can make it with pretty much any cornmeal in your kitchen) and as such it's the European cousin of grits. It's cooked in boiling water, milk, or stock, and it makes a wonderful base for toppings of spicy greens, pulled meats, or sauces. Risotto is the stirred rice dish that has a reputation for being quite finicky — but honestly, we've never had a truly awful risotto.
