Oven-Baked Ziti/Ziti al Forno - Ciao Italia Directions Heat 4 tablespoons of the olive oil over medium heat in a large stovetop to oven casserole dish or sauté pan with cover. Stir in the onions and cook them over medium heat until they begin to soften. Stir in the garlic and continue cooking until the garlic softens. Raise the heat to high; pour in 1/3 cup of the wine and allow most of it to evaporate. Pour in the remaining olive oil and add the eggplant; salt and pepper the pieces and cook covered, stirring occasionally until the eggplant begins to brown. In a bowl combine the tomatoes and the remaining wine; stir and add to the eggplant mixture. Preheat the oven to 350°F. Meanwhile cook the ziti in 2 quarts of boiling salted water for 5 minutes; they will cook further in the oven. Drain the ziti and add to the eggplant mixture and toss well. Revolutionary Mac & Cheese I found this recipe long ago and can’t believe I’m just now making it. The neat thing about this recipe, is you simmer the noodles in the milk instead of using water then adding it at the end. It’s cheesy and the mustard gives it a nice depth of flavor. It still doesn’t top the blue box for me (I know, I know but I just can’t help that I love it so much) but it is a great homemade alternative. I also made it a bit lighter by using skim milk, reduced fat cheese, and whole wheat pasta. Recipe for Baked Whole Wheat Spaghetti Casserole with Turkey Italian Sausage and Mozzarella Even when you're committed to healthy eating, once in a while you want something that's pure comfort food, so when I saw the Baked Spaghetti on Budget Bytes, I decided to try creating a South Beach Diet friendly version of this classic recipe. My recipe uses whole wheat spaghetti, with less spaghetti in proportion to the other ingredients. I use low-fat Turkey Italian sausage, which still has plenty of flavor. and a pasta sauce with the least amount of sugar I can find. I used 8 ounces of my favorite while wheat spaghetti, broken into thirds. While spaghetti cooks, heat 2 tsp. olive oil and saute the chopped onion. Add 1 1/4 lb Sweet Turkey Italian Sausage (squeezed out of the links) and saute until the sausage is nicely browned, breaking up the sausage with a turner (or potato masher) while it cooks. Velvety, creamy, cheesy, and worthy of only a spoon since it’s the closest utensil to a shovel. And here is the recipe for you! I know I lamented back in the fall about this being the very best mac and cheese recipe out there but until today, I’ve still yet to post a quick stove top mac and cheese recipe. I’ve tried a couple different stove top recipes in the past year but none of them really had the “wow” factor I was looking for.
