Stir in the onions and cook them over medium heat until they begin to soften. Stir in the garlic and continue cooking until the garlic softens. Raise the heat to high; pour in 1/3 cup of the wine and allow most of it to evaporate. Pour in the remaining olive oil and add the eggplant; salt and pepper the pieces and cook covered, stirring occasionally until the eggplant begins to brown. In a bowl combine the tomatoes and the remaining wine; stir and add to the eggplant mixture. Preheat the oven to 350°F. Cheesy Chicken Spaghetti Nothing says Comfort Food like good Old Fashioned Cheesy Chicken Spaghetti this is my daughters favorite dish. I know just what she is talking about when she asks "mom can you make the cheesy noodle dinner". I know it seems like a lot of work to throw this together and most people dont even know what Chicken Spaghetti is. All I can say is it's a Southern Thing! I can promise one thing that when you make this dish you wont be disappointed. Chicken Spaghetti also a freezable dish. This meal is the perfect meal to take to a church potluck, block party or maybe there is a new mom in the neighborhood that needs that would love to get dinner from a friend. First fill a big stock pot with water. Once chicken comes to a rolling boil, turn heat down and simmer chicken until done. Then bam there you go!!!
