Chicken & Spinach Pasta Bake 8 oz uncooked rigatoni 1 T olive oil 1 c chopped onion 1 (10 oz) pack frozen spinach, thawed 3 c cubed, cooked chicken breasts 1 (14 oz) can Italian-style diced tomatoes, undrained 1 (8 oz) container Philadelphia chive & onion cream cheese ½ t salt, ½ t pepper 1½ c shredded mozzarella cheese Prepare rigatoni according to pkg directions. Oven-Baked Ziti/Ziti al Forno - Ciao Italia Directions Heat 4 tablespoons of the olive oil over medium heat in a large stovetop to oven casserole dish or sauté pan with cover. Stir in the onions and cook them over medium heat until they begin to soften. Stir in the garlic and continue cooking until the garlic softens. Raise the heat to high; pour in 1/3 cup of the wine and allow most of it to evaporate. Pour in the remaining olive oil and add the eggplant; salt and pepper the pieces and cook covered, stirring occasionally until the eggplant begins to brown. In a bowl combine the tomatoes and the remaining wine; stir and add to the eggplant mixture. Preheat the oven to 350°F. Meanwhile cook the ziti in 2 quarts of boiling salted water for 5 minutes; they will cook further in the oven. Drain the ziti and add to the eggplant mixture and toss well. Cheesy Chicken Spaghetti Nothing says Comfort Food like good Old Fashioned Cheesy Chicken Spaghetti this is my daughters favorite dish. I know just what she is talking about when she asks "mom can you make the cheesy noodle dinner". Today was a really hot Texas day high in the 90's not the best weather to be cooking this dish and cranking up the oven, but it was requested so here it is! I know it seems like a lot of work to throw this together and most people dont even know what Chicken Spaghetti is. All I can say is it's a Southern Thing! I can promise one thing that when you make this dish you wont be disappointed. Chicken Spaghetti also a freezable dish. This meal is the perfect meal to take to a church potluck, block party or maybe there is a new mom in the neighborhood that needs that would love to get dinner from a friend. First fill a big stock pot with water. Once chicken comes to a rolling boil, turn heat down and simmer chicken until done. Then bam there you go!!!
