Butter1 Red Onion2 Cups Bread, diced into dice size pieces2 Tbs. Flour3 Garlic Cloves3 Tbs. Cream (Half and Half)3 Egg Yokes600 ml. Water500 ml. Directions: Brown Butter Set up a pot to warm with 3 tbs. butter on medium high heat. Set up a skillet to warm with 2 tbs. butter on medium high heat. Cut onion into desired size pieces, we went with a small dice, browns nicely to a lot of flavor while still maintaining some texture. Dice Bread into Die size pieces; create enough to fill your two cupped hands. Once the butter is browning add the onions to the pot and the bread to the pan. Stir both frequently for 3 minutes, add Garlic to the pot and continue to stir frequently for another few minutes. When the bread has achieved a nice color remove it from the heat. Once onion and garlic are quite brown add 2 tbs. butter in one spot and let it melt, then add flour to this pool and stir it around to get it wet.

Then...add the beer and water. Plating: Apple Cheddar CHEESE Soup with BACON BACON BACON. Here's a new twist on cheese soup. No beer this time, but stock and APPLE JUICE provides plenty of flavor. It's also a lot of potato soup as well. 3 large russets are blended smooth, but the starch in them helps to make this a very thick and creamy soup. I did make this in a crock pot. With the potatoes, it works perfect on a 4 hour high setting.

I hope everyone has all their Christmas shopping done and presents wrapped. I’m still behind on my gift wrapping. My last few presents came via delivery yesterday so I’ll be wrapping today —yay! These last few weeks have been brrrrrr… cold! So to combat the coldness, we’ve been having soup. Bacon Double Cheeseburger Soup. Fall is officially here and as if on cue the cooler weather rolled in which is good because I can now get into all of those fall dishes that I have been holding off on like soups!

This is quite a relief in that I have had the idea for this bacon double cheeseburger soup burning a hole in my mind pretty much all summer and I was just waiting for things to cool off a bit before making it. The idea for this soup is quite simple in that it contains all of the flavours of a bacon double cheese burger in soup form, and who doesn't love a bacon double cheese burger? This soup starts off with the base of any burger, the beef, and then moves on to the bacon and then the standard soup vegetable base of onions, celery and carrots which are sauteed in the bacon grease to maximize that smoky bacon flavour. A jalapeno pepper also joins the vegetable base to add a bit of spicy heat to the soup.
