Sticky Hoisin and Ginger Pork with Rice and Asian Greens

Hide Image [-] Ingredients Rice 2 cups brown rice 3 cups water Pinch of salt Sticky hoisin and ginger pork ½ cup hoisin sauce ½ cup Shaoxing chinese cooking wine 1 cup chicken stock 1 inch ginger, sliced very thinly and cut into thin matchsticks Zest and juice of 1 orange 2 pork fillets (about 600-700g) (at room temperature) 2 teaspoons sesame seeds Asian Greens 2-3 bunches Asian greens e.g. bok choy, gai larn, choy sum, broccolini, stalks trimmed, cut in half. 2 teaspoons sesame oil 2 teaspoons soy sauce Method Combine all rice ingredients in a pot and bring to the boil. Combine hoisin sauce, Shaoxing wine, chicken stock, ginger, orange zest and juice in a medium-size fry pan on medium heat and simmer for 4-5 minutes until slightly thickened.

So, I did what any woman in dire need of a recipe would do; I confiscated a friend’s cookbook. While flipping through the pages I happened upon this recipe and just knew I had to make it. What is Ribollita? It’s an Tuscan country soup and literally translated it would mean “reboiled”. Apparently this soup was born out of need for poor people needing a nourishing yet affordable meal made form left-overs. I didn’t use leftovers, though, I had to make do with what was in my fridge. Ingredients: 4 celery stalks 1 large onion 2 carrots 1 medium potato 2 large garlic cloves 1 can diced tomatoes (14oz) 1 can white beans (14oz) worcestershire sauce 3 cups of water 2 chicken bouillon cubes few drops tabasco 4 tbsp oil bread parsley pepper salt Directions: Strange, I only like celery in my soup. Peel the carrots and slice them.

I apologize in advance. Something about the recent lifting of the two-thousand degree weather has made me really excited about finally being able to eat hot food made in pots. I made three soups last week, unsure of which one(s) I’d use for my cookbook and which one(s) I’d post here. Yesterday, I closed my eyes and picked one…and was so happy this was the one I landed on, as it’s the one I most wanted to share. It’s very loosely based on a classic soup from a chain Italian restaurant, but departs from it in several key ways…not the least of which is the addition of heavy cream, which adds richness to the soup without turning it into…well, a creamy soup.
