Minestrone Soup Recipe

This favorite Italian soup is made with fresh seasonal vegetables, often with the addition of pasta or rice. Common ingredients include beans, onions, celery, carrots, stock, and tomatoes. There is no set recipe for minestrone, since it is usually made out of whatever vegetables are in season. It can be vegetarian, contain meat, or contain a meat-based soup base (such as chicken stock). So, what you put in your minestrone is really up to you. But where to start? (Recipe and photos updated, first published 2006) You can use canned beans (use a good quality brand, I recommend S&W or Bush's) or you can cook dry beans. If starting with dry beans, soak about 3/4 cup of dry beans overnight in cold water (or pour boiling water over the beans and soak for 1 hour). My favorite thai coconut soup is a 5 minute walk from our house and a hot slurpy bowl of mushroom pho is a short distance in the opposite direction. Both have been on my “to make some day” list for a long time. Well, friends, some day has arrived and this recipe was way easier to pull off than I had anticipated. First things first – this is not an authentic pho recipe because (aside from eating a lot of it) I’m not exactly the most experienced in Vietnamese cooking. Also, I’ve simplified things here by skipping a few steps that were in the recipes that I consulted. Authenticity aside, this a deliciously spiced hot bowl of noodles with hearty shiitake mushrooms and tender baby bok choy. This recipe makes enough to fill two very large (and very cute) bowls.

Lentil soup is actually the very first dish I learned to cook, and I am still amazed at how easy it is to make something so much better than you get from a can. I'm also sentimental about this soup, so it will probably always be among my favorite things to make. I do prefer using bacon fat here—I spend extra on premium bacon so I always strain and save the rendered fat for making this soup. The smoky flavor it brings to the soup is a great complement to the earthy lentils, but butter and olive oil also work well. For a vegetarian version, just leave out the chicken and bacon fat (use olive oil instead). Miso Pumpkin Soup.
