Can you EVEN believe I almost forgot to share with you this delicious baked pasta recipe? It was back in November when I made this pasta… and I remember the day perfectly… It was real sunny. I tend to cook healthy dishes most of the time, but decided to go all in on this one and it was so worth it! I was in the mood for some comfort food this week, and my cute little French Onion Soup bowls were begging to be used again , so I dreamed up this French Onion Mac & Cheese! Uh huh, cavatappi pasta mixed with a creamy fontina, asiago, and mascarpone cheese sauce and a healthy dose of caramelized onions (which just make everything better!). I didn’t stop there though. In order to mimic the soup, I filled up the bowls with my mac & cheese and topped them with some croutons and grated gruyere cheese.
You know fall is quickly approaching when the countdown to college football has begun. (12 days, 17 hours, 30 minutes, and 34 seconds. Not that I checked or anything.) Time is flying by so fast, but I still have a few things on my summer checklist I need to accomplish. Roasted potatoes are pretty much my life. I’ve been told that I make one mean batch of roasted potatoes, and so I feel like it’s my civic duty to share the recipe with you today.
