Appetizers. This week has been such a mess!

I can't wait for next week for a total do over! I have so much to accomplish this weekend - thank goodness it's a 3day weekend! Any fun plans you guys have for the extra time? I mean, seriously, nothing is even worth trying on. Last time, Piggie and I drove almost an hour to get to a decent mall and didn't get a single thing. Stopped at Target on the way home- found a dress within eight seconds. Not to mention the Target sunglasses, purse, books, dinnerware, make-up, chocolate, and etceteras that I am currently basking in. Seriously, it just gets better and better every time I go there.

Every night I pray to God that he will someday give me the courage to fulfill my lifelong dream and hide in a rack of clothes during closing time so I can stay there ALL NIGHT. I can tell you one thing. But getting back to how much I hate the mall, I have to say, there is no way that any lack of coolness could ever completely keep me away from that wasteland. Mall pretzels. Anyways, they WERE better. It starts out with some dough. You must roll them thin.

Gasp! I know, I know… I started making these rolls a couple of years ago at Thanksgiving and Christmastime and they’ve been a big hit with Greg’s family, in particular with my father-in-law (hi Bill!). Served warm and gooey and stuffed with feta and spinach, it’s hard to eat just one. I got the idea for these when the wife of one of our hospice patients made something similar and sent a whole tray of them to one of our team meetings. Anyway, these are simple to make and always a great addition to a meal.

Windy City Crescent Rolls Serves 6-8 Ingredients 2 tubes Pillsbury (or whatever brand) crescent rolls, 8 ct 4 oz crumbled feta cheese 4 oz shredded mozzarella cheese 3 oz fresh baby spinach (about half of a pre-washed bag), chopped 2 oz black olives, finely diced ( *this ingredient is optional ) 1 egg white, beaten 1/4 teaspoon red pepper flakes dash salt and pepper. It’s definitely not on your New Year’s resolution list. The Super Bowl is coming up (in case you haven’t heard), so the next few posts will be some fancy-schmancy appetizers for the big game. Well, actually, they are not fancy-schmancy, but easy to prepare, savory, and completely manageable. Besides the Super Bowl coming up, I am a huge fan of appetizers. I have always been fascinated by how just two or three or four ingredients could be combined for a flavorful amuse-bouche (a single, bite-sized hors d’œuvre) or layered on a piece of toasted baguette for a tasty crostini. Yummy. Appetizers can be as simple or as complicated as you like and, when I have guests, I like to offer a little bit of both.

And once stuffed and properly chilled, it becomes a neat appetizer. This particular one is filled with all my favorite things: goat cheese/cream cheese, sun dried tomatoes, olives, spicy salami, crunchy bell pepper, and fresh herbs. Makes one 12-inch long baguette; about 24 slices Ingredients: Baguette about 14-inch long8 oz cream cheese, at room temperature 4 oz fresh goat cheese 1 large garlic clove, minced ½ cup finely chopped red bell pepper (about 1 medium) ½ cup finely chopped sun dried tomatoes in olive oil¼ cup finely chopped Kalamata olives 2 oz finely chopped spicy salami About 2 tbsp minced Italian parsley About 1 tsp minced fresh thyme Freshly ground black pepper Salt to taste (very unlikely since there’re plenty of salty ingredients) Preparation: Slice off both ends of the baguette.
