This recipe takes care of my craving for some good Californian Mexican chile colorado. Tender chunks of beef in a yummy sauce, wrapped in a soft flour tortilla, smothered in more sauce and cheddar cheese, and then broiled to bubbly perfection. Mmmmmm.I don't even think I'd had chile colorado until I met my husband and he took me to Casa Gamino in Paramount, California. Now, Casa Gamino is MY idea of great Mexican food. Their salsa is fresh, peppery, and perfect. **Note: You may have to adjust the cooking time depending on this size of your chunks of meat. Homemade Chilaquiles. Better Than Taco Bell’s Mexican Pizza. We’ve got a burrito. Duh. Simple, Easy, Everyday Recipes. Oven-Fried Chicken Chimichangas. Homemade Mexican Style Chorizo. Remove the stems and seeds from the dried chili peppers.

Homemade Mexican Style Chorizo

Use a damp paper towel to wipe down the dried chili peppers. Toast the stemmed and seeded chili peppers in a dry pan over medium heat until pliable (about 1 minute on each side). Transfer them to a large non-reactive bowl (stainless steel, glass, or plastic), layer the chopped onion and garlic on top. Heat the vinegar (either in the microwave or on a stove top) until very warm to the touch. Pour over the chili peppers, onions, and garlic and lay a plate on top to weigh them down. Transfer all of the peppers, onions, garlic and vinegar to a blender and process until you have a smooth, thick paste. When the chili paste is completely cool, mix thoroughly into the ground pork with the remaining ingredients using your hands until everything is completely mixed and a uniform colour.

Divide the mixture into one-meal sized portions and put each portion into an appropriately sized zipper top bag. Oven baked fajitas. Well, i just found my new favorite (easy) dish!!

Mexican food has always been one of my very favorite meals, but its no secret it can be fattening. this alternative that bakes the fajitas is SOOO GOOD, and much better for you! Its also incredibly easy. i found a version of this recipe on a very cool cooking block, six sisters stuff.com. you can see their recipe here. i added a few things, and took out a few things, to make it my own. i love the added cilantro…such a great addition. i also tossed the chicken in garlic cooking cream. philadelphia cream cheese makes these new cooking creams, available in all sorts of flavors. they are really good. the garlic version has just enough spice where its not overpowering…but really kicks the taste up a notch. if you don’t want to go out and buy that, adding a little garlic salt would also taste great. here are some pics of the process, the detailed recipe is below:

I’ve eaten them ever since I can remember. My mom makes the best Navajo Tacos ever (Navajo taco topping anyway =). She would cheat a little and use frozen Rhodes Rolls dough for the fry bread portion, which was also delicious but nothing compares to homemade Navajo fry bread. If you want to use frozen roll dough, all you have to do is fully thaw and rise the dough (according to directions on package) then fry it and top with the Navajo taco topping. This recipe I created for the fry bread really is incredibly simple though, you can basically make it in the time it takes just to prepare the roll dough for thawing. Who knows why I can’t dollop sour cream in the center, we’ll just say I meant to do that =) So good with honey or honey butter…
