We can find them from Afghanistan to Sweden, to Romania and to Spain. While in America, most of us have probably enjoyed and come to become most familiar with Italian meatballs, we wanted to try something a little different: a Mexcian albóndigas soup! Pozole Rojo, Red Posole Recipe. 1 Fill a large 10-12 quart stockpot with 5 quarts of water.

Set on heat to bring to a boil while you proceed with the next steps. 2 Remove and discard the stems, seeds, and large veins from the chili pods. Heat a cast iron pan on medium high and lightly roast the chili pods for a couple minutes, until they begin to soften. Do not let them burn. While the chilies are heating, bring a medium pot with 3 cups of water to a boil. 3 Heat a tablespoon or two of olive oil (enough to coat the bottom of the pan) in a large sauté pan on medium high heat. 4 Once the meat has browned, transfer it to the large stockpot of boiling water. 5 Prepare the red sauce by puréeing in a blender the chilies, 2 1/2 cups or so of their soaking liquid, a teaspoon of salt, and 4 cloves of garlic. 6 Add the red chili sauce to the pot with the pork and hominy. 7 When getting ready to serve the pozole, you can prep the garnishes (slice the cabbage, chop the cilantro, etc.)

I absolutely LOVED this soup that I found on Bev Cooks! The meatballs were tender, flavorful, and juicy while the soup was spicy and delicious. I loved the creamy bits of avocado in each bite along with the salty cotija cheese. I had the leftovers for lunch for two days and it just seemed to get better and better. Chicken Tortilla Soup. But, this version is texturally (hmm, is that even a real word?) My favortie. It involves pretty much the same ingredients that most recipes include, but it’s blended, giving the soup a creamier and smoother texture than most. And that’s what makes it so awesome…it’s definitely a whole meal in itself. A must topping for this soup is some black bean salsa (see recipe here). Chicken Tortilla Soup Recipe Ingredients: 2 tbsp olive oil 1 onion 4 garlic cloves 1 jalapeno/serrano pepper 4 corn tortillas 1 (10oz) can of diced tomatoes with green chilies 5 cups of chicken broth 1/2 tsp cumin powder 1/4 tsp cayenne pepper powder (optional) 1 tsp dried oregano Big pinch of fresh cilantro, finely chopped 1 cup of frozen corn 2 cups cooked chicken, shredded or cubed 1/2 cup heavy cream 1 cup Monterey Jack cheese, shredded Juice of 1/2 a lime Salt to taste Method: - Start by roughly dicing the onion & garlic.

I am 29 years old. A mature, educated male with a full time job and other adult type responsibilities. Yet one of my favorite activities is to get together with my other adult friends for what we call a "PBDP", or Perler Bead Dinner Party.
