I think it’s a mental problem lol. Anyways, today’s craving was chipotle’s chicken burrito bowl… And that is exactly what I made I got all the recipes online from other fellow chipotle fans as myself, since I don’t have a clue when it comes to Mexican cooking. I still managed to tweak the recipes to the ingredients I had, and it still turned out delicious! Enough with the chitchat and on to the recipes… Chipotle’s grilled chicken marinade: The original method of cooking the chicken is to marinate it overnight and grill it flat (lay a brick wrapped in foil on it)..

I made the marinade, added water. Let me just say I wish you were here to smell how good it was :)….. My tweaked version: - 1 7oz can of chipotle pepper in adobo sauce. Taco Pasta Bake. This is a very popular Mexican pasta bake.

" Every once in a while trash food is the best kind of food, comforting and totally delicious. Mexican Dorito Casserole Serves about 6 Ingredients 2 c. shredded cooked chicken1 c. shredded cheese (or more if you are a cheese hound)1 can cream of chicken soup1/2 cup milk1/2 cup sour cream1 can Ro-tel tomatoes (canned tomatoes with jalepenos-mild)1/2 packet taco seasoning (or more- to taste)Bag of doritos DirectionsPre-heat oven to 350-f degrees.In a mixing bowl, combine all ingredients except doritos.In a greased 2 qt baking dish, put a layer of crushed doritos (about 2 cups), then a layer of the chicken mixture.

This recipe is no exception. I had repined it from The Girl WhoAte Everything a week or so ago, and whipped out a slightly modified version on the family over the weekend. It was quick, easy, and most importantly, DELICIOUS. 1 pound ground beef 8-12 ounces medium pasta shells (I used whole wheat—yum!) 1 small onion, chopped (about 1 cup) 1 clove garlic, minced 1 (14 oz.) can diced tomatoes, drained (I used Ro-tel mild) 1 packet (4 tablespoons) taco seasoning 3 ounces cream cheese 1/2 cup sour cream 1/4 cup chopped cilantro (optional) Salt and pepper Bring a large pot of water to boil.

Meanwhile, in a large skillet or sauté pan, cook the ground meat and onions over medium-high heat. TIP: I used the entire taco seasoning packet, and I don’t know that I will next time. Stir in the cooked pasta, cream cheese, sour cream and remaining pasta water.
