I would literally polish off a box of Samoas after school while doing my homework. Chock up another ‘sale’ my parents had to chip in for. Thin Mints and Samoas are my favorite Girl Scout cookies and since I already have a fast, easy, no-bake, and foolproof Thin Mints recipe, it was time to tackle Samoas. The textures and flavors are all there in this giant Samoa cookie. Gooey, chewy, sticky, sweet, and wonderful. It’s a fast, easy, no-mixer recipe that comes together in minutes and there’s nothing fussy about it. I made a simple stir-together dough for the crust before topping with chocolate chips, shredded coconut, sweetened condensed milk, salted caramel, and a final chocolate drizzle. You can use homemade salted caramel or your favorite storebought.

Don't let the fact that the title contains the word "boiled" scare you away from them. They are divine. This recipe was given to me by my Aunt Lynne, and they very well may be the tenderest cookies I've ever eaten. And they have raisins in them so you New Year's resolutioners can tell yourselves you're just eating them to get a serving of fruit in. And to top it all off, they sparkle in the sunlight--how sweet is that? Ingredients:1 1/2 c. raisins1 c. water1 c. sugar1 c. shortening3 eggs1/2 t. vanilla1 t. baking powder1 t. baking soda1/2 t. salt3 c. flour Directions:Boil raisins in the 1 c. water over medium heat, stirring occasionally until water is boiled off; set aside. I'm back to baking and this blog post has a recipe. So, while I was in Ireland, (Wait.....real quick! Check out my cute oven mitt and pot holder from Ireland! Look! A Black sheep. It says baaa! Ok...back to what I was saying. Ron's been teasing me in his comments on my blog posts that he deserves a dessert after this race since he didn't eat too many sweets while training for this insane event. Well, the joke's on him because today in the mail is a box of goodies. Mmmmm! I stumbled upon the recipe for Rolo Cookies and my eyes liked what I saw. Moving on.

Check out the thickness of this cookie dough! These cookies were very fun to make because they involve doing a magic trick. Place Rolo in dough. Now you don't! 2 1/2 cups of flour 3/4 cups cocoa 1 tsp baking soda 1 cup sugar 1 cup brown sugar 1 cup butter 2 tsp vanilla 2 eggs 1 pkg RolosA bit of sugar for garnish Directions:Preheat oven to 375 degrees. Beat sugars and butter until fluffy. Add vanilla and eggs to mixture.Beat until combined.
