Spicy barbecued leg of lamb. Pea & Goats Cheese Risotto. Fish Recipes. Salmon & Pesto Dressed Vegetables. Method To make the pesto, place a small frying pan over a medium heat, tip in the pine nuts and toast until very lightly golden – keep them moving so they don’t burn, then place in a small bowl and put to one side.
Peel the garlic, then place in a pestle and mortar with a pinch of sea salt. Pick and tear in the basil leaves. Bash the mixture to a paste, then add the pine nuts and pound again, leaving a little bit of texture. Scrape the mixture into the small bowl. Add 2 to 3 tablespoons of extra virgin olive oil – you need just enough to bind the pesto and give it an oozy consistency – then finely grate and stir through the Parmesan. Add a squeeze of lemon juice. Scrub the potatoes well, then trim the beans and broccoli. Fill a large pan three quarters of the way up with boiling water, add a pinch of salt and bring to the boil. Arrosto Misto. Method Preheat the oven to full whack.
Peel and add 3 cloves of garlic to a pestle and mortar, pick in half the thyme leaves and bash well with a good splash of oil and a good pinch of sea salt and black pepper. Rub the paste all over the chicken, making sure to get into all the nooks and crannies. Halve the lemon and place in the chicken cavity along with the remaining thyme sprigs. Season the duck all over, rub in a good drizzle of oil, then finely grate over half the cinnamon stick. Hasselback potatoes with gorgonzola & honey. Method Preheat the oven to 200ºC/gas 6.
Make cuts across the width of each potato, 1 to 2mm apart, all the way along. Slice about two-thirds of the way into the flesh. Pick the rosemary, then stuff the cuts in the potatoes sporadically with the rosemary leaves. Persian squash & pistachio roast. Method Preheat the oven to 180ºC/gas 4.
