A cake with 2 ingredients; it’s like magic. I always said to myself that if I ever found a recipe with just 2 ingredients I would make it all the time, so now I really am going to have to… I’ve heard about 2 ingredient recipes before and got really excited, only to find that one of the ingredients is a type of cake mix only available in America, which was very annoying!

And it still tastes just as good. My theme for this weekend was to simplify. I’ve been making a lot of cookies that require only three or four ingredients lately. I have been wanting to get back to my mug cake series and I thought the perfect way to ease in would be to simplify some of my mug cakes. I slashed out all the ingredients I didn’t think were needed and kept the essentials. I started out very skeptical when I saw this cake on foodepix.com years ago.
If you look closely enough you can see this cake has 3 layers, with a layer of custard in the middle. Many people have asked me why does the cake end up with 3 layers and I’ve thought about this for a long time and especially after making it dozens of times I really think it’s because of the thin batter and the egg whites that are folded in.
