Though very real and significant progress in reducing global hunger has been achieved over the past 30 years, "expanding food production and economic growth have often come at a heavy cost to the natural environment," says The Future of Food and Agriculture: Trends and Challenges. "Almost one half of the forests that once covered the Earth are now gone. Groundwater sources are being depleted rapidly. Biodiversity has been deeply eroded," it notes. As a result, "planetary boundaries may well be surpassed, if current trends continue," cautions FAO Director-General José Graziano da Silva in his introduction to the report.

But as countries become more affluent, changing consumption patterns are giving rise to other health threats. This "food insecurity transition" is documented in a new report released today by FAO. Regional Overview of Food Insecurity: Europe and Central Asia analyzes a wealth of country data: on dietary energy supply, undernourishment indicators such as stunting and wasting, anaemia, overweight and obesity, and what people on average are eating. The report points to a pattern whereby countries progress from dealing predominantly with undernutrition and micronutrient deficiencies, to coping with degenerative diseases associated with increased dietary fat, sugar, meat and dairy, and processed foods. Ces produits résultent du différentiel entre les quantités commandées par un client et celles finalement consommées lors de la réception, ou encore de l'annulation de prestations au tout dernier moment. Les invendus, maintenus au frais, remis en température une seule fois et non placés sur les buffets, sont donnés avec l'accord des clients. «A minima, il faut compter le reconditionnement, et a maxima, rajouter les coûts de formation et d’abonnement à l’application Eqosphère. Si on raisonne au coût par ramasse, je pense qu’on peut parler d’une moyenne de 200 € par ramasse» précise Claire Pennarun.
