http://www.lickmybalsamic.com/ mashed up three cloves of garlic in a mortar and pestle, with a sprig or two of fresh thyme and rosemary, salt, black pepper, a splash of olive oil, and a pinch of white sugar. rubbed a trussed pork loin roast (locally raised, from the whole pig that was butchered) with this mixture, then placed the loin on a bed of quartered yellow onions and celery stalks in a cast iron skillet. placed the skillet in a 275-degree oven, uncovered, until the internal temperature was 150-degrees. pulled the skillet and roast and turned the oven up to 500-degrees. placed the roast on a rack on top of a baking sheet and threw it in the oven for about 5-minutes, until the outside had developed a nice crust. removed the roast from the oven and let rest on a plate covered in aluminum foil for about 10-minutes, until ready to serve.

The more Thai restaurants and dishes I try, the more I find that Thai cuisine is actually quite varied, but I also appreciate the places that do the classics well. Rama Thai is a new-ish luxe Thai restaurant on the top floor of ATT4Fun, with a wall of window and balcony seating with a panoramic view of 101. There is also an outdoor patio bar that opens up during the summer and swimming pool at the entrance. Opened by the owners of Brown Sugar and Dozo , they bring the same cool vibe and modern design to Rama Thai.
I'm thankful for my friends, my family, my readers, my personal trainer...The fact that I have a roof over my head, food in my fridge (and belly), that I have an AWESOME recruiter for helping me find this job...For this equally AWESOME company that will be putting me under their wings....And so much more. A new tube of lipstick, the dusty scent of my cat’s belly, artificial watermelon flavor, lily of the valley, onions cooking in butter. Ah, saturated fat. The most maligned and misunderstood "bad" food in the last thirty years. During the last year, I've been trying to figure out why everyone thinks saturated fat is evil and I have been unable to discover any evidence that there is evidence that saturated fats are bad for you. In fact, quite the opposite. I'll take this space and discuss briefly (although it might seem long to you) saturated fats, polyunsaturated fats, cholesterol, and the misconceptions we've been brought up with. I'll touch briefly on trans fatty acids too, but that topic is so nasty that it really deserves it's own article along with the possible manipulation of the American diet by food oil companies.
