We recently partnered with the North Carolina Sweet Potato Commission to create videos about one of my favorite foods – the sweet potato. I’ve been inspired to make all sorts of stuff. Also, I’ve embraced wavy hairs. This shrimp ceviche might be my most favorite thing EVER. It’s inspired by the ceviche I always order at one of my favorite LA restaurants, Corazon y Miel. The chef there loooves Peruvian food, you can just tell. He sort of blurs the lines of tradition, taking what he likes from each region’s version of a dish. This is sort of a combo of the two, mainly because Peruvians never eat their ceviche with chips and Mexican ceviche tends to be tomato-based. The base is spicy, a little gingery and very, very lime-y.

One sliced finger and a broken garbage disposal later I was finally able to complete some new dishes…..yeeeeeeeah I guess I’m a little rusty when it comes to the kitchen. Or I’m just super clumsy, whatever. I’m definitely excited to have some fresh new recipes to share especially since my Instagram it starting to look more like a wedding blog these days than a food blog! I’m not complaining though, I would totally be a wedding planner in another life.

Seriously. But back to real life – can we just talk about summer?? Ingredients 4 peaches, chopped (I left the skin on mine, but feel free to peel them) 4 roma tomatoes, chopped 1 mango, peeled and chopped 1/2 red onion, finely chopped 1 red pepper, chopped 2 jalapenos, finely chopped Juice of 1 lime 1 Tbsp raw honey or agave Instructions In a large bowl, combine all ingredients and allow salsa to marinate for a few minutes or cover and refrigerate until serving. I don’t really have much to say about this salad other than it’s the perfect thing to bring on a picnic, or to a BBQ. Growing up in Idaho my high school was right next to this market called the CO-OP, and I would go there a lot for their pre made salads at lunch. They also had a Broccoli salad there and I loved it so much. The crunch factor was intense, and also awesome because it wasn’t lettuce. I’m not really a fan of steamed or cooked broccoli, so in this form is really the only way I want to have it. Broccoli Crunch Salad Serves 6 to 8 Ingredients:dressing:2/3 cup mayonnaise1 1/2 tablespoons apple cider vinegar1/2 teaspoon superfine sugar (granulated is fine)1/2 teaspoon salt1/4 teaspoon cracked black pepper Directions: 1. Balsamic Watermelon Chicken Salad

I’ve had this idea written up on my nice little kitchen chalkboard for at least three weeks now. The name “Watermelon Chicken Salad” sat there happily on the board right next to all my other random ideas, most of which have since gotten scratched off and erased and replaced with something new because I actually made them and posted them. For whatever reason, this little guy lingered. Another week would pass with no sign of a watermelon chicken salad, but for whatever reason when I’d clean off my board for the week, I really didn’t want to erase the idea just yet.

I had this premonition of great things to come. Speaking of great things. In the three weeks that “Watermelon Chicken Salad” has been staring me down from the chalkboard, I’ve bought 8 million watermelons with very good intentions, thinking that each of them would be the one I’d use to make some kind of inspired and beautiful salad.
