Cookies & Cream Cheesecake Cupcakes

Cookies & Cream Cheesecake Cupcakes
See the UPDATED video post for this recipe HERE!! Until making these cookies & cream cheesecake cupcakes, with an Oreo on bottom, I hadn’t eaten an Oreo since I was a kid. This recipe not only brought back chocolatey childhood memories but also reminded me of how much I like Oreos. I didn’t think I liked them that much now that my palate has, ahem, matured, but I was wrong. Very wrong. And I also realized that it is very dangerous to not only make these cupcakes but to have a package of Oreos in the pantry.

Kitchen Window: Corn, East Indian Style This recipe is adapted from Modern Spice by Monica Bhide (Simon & Schuster 2009). These small patties take practice to make perfect. Make sure the peanuts are not ground too fine. There should be small pieces in the mix. Fry on medium heat to make them perfectly crunchy on the outside and moist on the inside. For the cooked corn you can cut kernels off roasted, steamed or boiled ears, or use well-drained canned corn or thawed frozen kernels. Caramel Brownie Cheesecake This is a monkeyhead concoction so please don’t be disappointed with me that it’s not 100% homemade. Sometimes as a mom you have to go with your childrens ideas in order to lift their creative wings. Monkey One loves cheesecake and caramel, Monkey Two has a passion for brownies you put the two of these knuckleheads together and look at what they come up with… Caramel Brownie Cheesecake.

Butterfinger Blondies Butterfinger Blondies bursting with chunks of Butterfinger candy and milk chocolate chips. After making the Butterfinger Cookies last week I still had a large bag of fun size Butterfingers lying around my house. Instead of eating them one by one which is what would have undoubtedly happened, I found this recipe for Butterfinger blondies! If you are a fan of Butterfingers, then these chewy, peanut buttery blondies will become your new favorite dessert! ENFP Profile Extraverted iNtuitive Feeling Perceiving by Marina Margaret Heiss Profile: ENFP Revision: 4.0 Date of Revision: 28 Feb 2011 [The following comes partially from the archetype, but mostly from my own dealings with ENFPs.] ENFPs are both "idea"-people and "people"-people, who see everyone and everything as part of a cosmic whole. They want to both help and to be liked and admired by other people, on both an individual and a humanitarian level.

Mashed Potatoes with Bacon & Cheddar 1. Preheat oven to 350 degrees. Peel potatoes, and cut into 1-inch chunks. Place in a large saucepan, and add enough cold water to cover by about 2 inches. Bring to a boil over medium-high heat, and reduce to a simmer. Coca-Cola Cupcakes I don’t drink coca-cola. But I do eat it. Weird. Yeah, I dunno. It’s way better eaten. Lovin' From the Oven: Chocolate Chip Oreo Cookies Chocolate Chip Oreo Cookies I procrastinate from my homework the best when I’m baking. Seriously. Instead of writing a 1000 word paper, I browse through my bookmarks on my computer and decide what I want to bake. After figuring out my next culinary mission, I get right to it and start mixing my little heart away. Once everything is set and cooled, I figure, “Well… I already have all my materials out, why not bake something else?”

Apple Pie Apple pie…the classic American dessert. This traditional apple pie is amazing with two types of apples and a woven flaky lattice crust. Many people serve it with ice cream, whipping cream or a slice of cheddar cheese. I have been waiting for apples to go super cheap at the grocery stores. This weekend was it-apples were fifty-nine cents a pound! I was so excited, I probably looked crazy going to the checkout with several tote bags of apples.
