You need: a slow cooker and aluminum foil Directions: Wash, scrub, and cut out any bad spots from potatoes. Wipe them dry and let them sit until skin is visibly dry all over (they should dry within a few minutes). Prick each potato 6-8 times with a fork. Place potatoes in single layer on baking sheet or large dish, drizzle with olive oil, and use hands to rub a thin coat of olive oil evenly all over the potato skin. *approximately 4 lbs of potatoes can be cooked in a 6-1/2 qt. slow cooker. **if you prefer a plain potato more similar to a typical oven baked potato, omit the olive oil and seasonings. How’s your week going? I am sure some of you get sick of all the pumpkin recipes this time of year, but for me, I simply cannot get enough of them. Weeknight tikka masala. Slow cooker tomato sauce. Secondly, it can be used in a million different ways – pizza sauce, spaghetti bolognese, lasagne… (and this recipe actually makes enough for at least two meals). When I first took the lid off my slow cooker, I wasn’t sure if I was going to post about this recipe – it’s not the most attractive dish I’ve ever made, and it turns out it’s really tricky to photograph the inside of a slow cooker. But, then I had a taste and my jaw dropped (not literally, not with a mouthful of food anyway) – this Mexican casserole is one of my favourite things that I’ve ever made in my slow cooker.

So please look past its somewhat scruffy appearance and the slightly dodgy photos, and just think about how it tastes! The texture of this casserole is actually pretty hard to describe – it’s not quite eggy, not quite bready, not quite spongy… it’s just a fluffy mixture that’s surprisingly filling at the same time. Along with my favourite Mexican-style ingredients (black beans, corn, coriander, jalapeños), it makes an awesome low-effort dinner. Slow cooker ratatouille.
