Our new favorite red beet and poppy seed muffins. It all began when we came home with a handful of baby beets we harvested from our community garden.

“Let’s go pick the remaining beets before they pull everything out” said Karen who is an avid gardener and whose mother heads our community garden project. She didn’t have to tell me twice. The children and I headed to the garden five minutes later with our market basket and the excitement of a meal to come. We walked by rows of carrots, tomatoes, strawberries, kale, lettuces, eggplants, peppers, and more.

Miren ran around in circles while trying to eat every cherry tomato she encountered. “Only pull the ones that are already peeking” I instructed Jon who carefully examined all the beets and enlisted Miren in the task. “So red!” “That is how natural red food coloring is made” I explained to them. And talking about the book, we have cooked up a whole bunch of great recipes lately. We still work on the recipe list – loosing one recipe, adding another. The day before Luise left, we packed a basket and went on a picnic in the beautiful park Rosendals Trädgård in Stockholm.

When you take your first bite, you're probably going to be reminded of a really moist banana bread, so if you're into that, then you will be into these. This recipe is super flexible, and is much more forgiving than most baking recipes. You can sub any nut butter you like, and the sugar source is up to you too, but I would always recommend sticking with maple syrup or honey and staying away from anything refined. I’ve been using hemp seeds in my recipes for years (before it was um, ‘hip to eat hemp’). When I started using hemp seeds and talking about them in my recipes, I got that “ohhhh, you are hippity dippity!” Sort of reaction. People didn’t know that hemp seeds were a highly nutritious food – a ‘superfood’ if you will. No, instead they thought they’d get high from my brownies. Jokes aside, it took a few years for the worth of hemp – high in protein, essential fatty acids, and antioxidants – to be recognized in the world of healthy eating.
