Loaded Hasselback Sweet Potatoes

As promised, here we are with the second recipe in my ongoing series of veggie video recipes in collaboration with Harris Farm Markets. If you missed the memo, I tell you all about it in my previous post. If you can never decide whether you would rather have a baked sweet potato or sweet potato chips, this is the recipe for you.

It combines the best of both worlds; with gorgeously crispy, browned edges as well as that soft, intensely roast luscious sweet potato at the base. As for the toppings, you can make it as simple or as all-out extravagant as you like! If you would like to serve it as a side, it’s better to keep things more minimal….or you could even skip the savoury notes, roast it with a little butter or coconut oil, a generous sprinkle of cinnamon then drizzle with maple syrup before eating, and you’ve got yourself a gorgeous cosy and warming dessert! *This post is in collaboration with Harris Farm Markets Loaded Hasselback Sweet Potatoes Total time 1 hour 10 mins.

Ever since I was a kid, most days I would prefer heating up a big bowl of leftover peas and carrots for dinner over even the most tempting of takeout options. However, I have noticed that this common veggie-hate phenomenon seems to be a universal thing. Children being the guiltiest of all. I have no kids of my own, but I can’t count the number of times I heard a young mom say “my kids simply refuse to eat their veggies”, and it always makes me sad. And confused. You see, veggies are as diverse as people are. Maybe you had a bad experience with a certain vegetable. Well fear not, oh veggie haters of the wrold, for veggie girl is here to save the day. I’m gonna slice, grate, dice, mash, shred and chop until you scream for mercy.

They are the food of the Gods. There is nothing not to love about them. My obsession, however, means I eat sweet potato wedges around four or five times a week, which is perhaps a little monotonous and excessive. I needed a variation, which is exactly what I got. The tahini, coriander, cumin, chill flakes, garlic, lime juice and tomato puree brought their flavour to the next level and then I added extra tahini for a creamy dressing. Makes 4 cakes. , was an Indian lentil soup. Looking back on that photo and the short text that came with it, I definitely feel that we have learned a whole bit about food photography, recipe writing and blogging during these years. But one thing that stands strong from that old post is the actual recipe. We still make that lentil soup often, most regularly during the cold months (which in Scandinavia translates to 9 out of 12 months). Everyone in our family likes it and it’s a very quick and hassle-free recipe to cook when you also have to keep an eye on two kids running laps around the apartment (or one of them is running and the other one is toddling and wobbling after her).

My point is that lentil stew or dal, as it is called in India, has always been one of our favourite comfort foods and we just haven’t posted it enough here on the blog.
