I found out I fractured my tailbone and have been utterly wiped out (unrelated to the buttock, I think). However, there is a plus side to everything. Now I get to carry around my own cushy pillow and no one can judge me. Ohhh yeah. After toting around my cushy pillow, I usually can sleep really well at night, a pretty big plus. I also found out that I actually really love riding the bus, a big plus that's easy on me & the wallet. But these pretzels can make any day better. Small enough to pop in your mouth and no need to feel guilty when you eat 10 of them because you totally didn't eat a whole soft pretzel.

Sometimes I wonder if Whole Foods wouldn’t be kinder to shoppers if they erected an electric fence of sorts around some areas of the store. Not a high intensity zap, but just a little bzzz to keep me away from, say, the wall of energy bars, the fine quality chocolate, and the greek yogurt. Actually, what might work even better would be a timer. One of those little sand filled hourglasses from Pictionary. Something to limit the minutes, ahem hours, I can spend gazing at artisanal cheeses that cost upwards of $10 a pound. I have a sneaking suspicion that I’d adapt to that sort of speed shopping, though. It would become a matter of running in and running out with ten items or less- the only items I’d managed to grab being imported gelato, Icelandic skyr yogurt, a cake, and freshly baked bread.

That silly girl was me. That was back when I was just venturing into the realm of homemade baked mac and cheese, after being scarred by so many dishes served at various potlucks that looked oh-so promising and tasted decidedly not so. Now I realize that there are so many combinations and permutations possible, it is crazy to think that one version has to be “the one”. From extremely simplistic to versions with more pizzazz, I have found a lot of great recipes, and still have plenty more that I want to try. All that being said, the version I am sharing with you here today is, at least to me, what an ideal classic mac and cheese should be. It is what all those potluck dishes were trying to be when they somehow fell short.

Well, it's Friday already, and I'm seeing the light at the end of the tunnel. The cold's clearing up, the back's getting better (after 30 pieces of Salonpas, it had better be!) Now, on to today's post - CAKE (also known as "the solution to bad days"). My family eats strawberries almost everyday - the Korean ones, obviously. :) Often times, we eat them fresh, but on and off, I like to use them in my desserts.

Cake, however, well cake…deserves to be spoken about at length. Some people save cake, and desserts in general- cookies, pies, all the sweetest and dreamiest of confections- for special occasions. The very notion was absolute lunacy to me for twenty years. Five years ago I took a break from cake. The good news is that she came back, with a vengeance, and she’s never leaving my side again.
And in some respects, I get that people want cake to be special, a treat. I may be pushing it here, but I’d say that a wedge of cake and a fork, plate or no, warrants at least two mylar balloons, a greeting card, and a sequins mini.
