Cook the Book: Cheesy Herbed Popovers [Photograph: Caroline Russock] Long before I felt comfortable baking bread at home, popovers were a part of my "fancy dinner for friends" repertoire. They were quick and easy, but also held the same magical appeal as a homemade, freshly baked yeasted loaf—at least for my college-aged buddies. I loved baking them not only for the oohs and ahhs, but also because I enjoyed watching the dramatic rise over the rim of the muffin tin that they baked in. Nowadays, I am far from intimidated when it comes to baking a loaf of bread, yeast and all, and my baking projects are a little more complicated. But I still occasionally bake up a batch of popovers to accompany dinner.

Rainbow Jello Recipe June 22, 2010 When I was young, rainbow Jello would always be one of the offerings on the dessert table. I used to peel the layers of Jello apart and eat them one by one, my favourite being cherry. I have a lot of fond memories of rainbow Jello, but like most things from my childhood, rainbow Jello slowly disappeared without much fanfare. Lincoln’s Red Velvet (Cheesecake) Cake Wednesday, April 7, 2010 Lincoln’s Red Velvet (Cheesecake) Cake Psssst…. there’s a surprise inside this pale exterior! Oh yeah! Cinnamon Toast&Rolls - Circle B Kitchen - Circle B Kitchen - StumbleUpon The USDA released its new food pyramid the other day (which is actually a plate now instead of a pyramid), and I am sorely disappointed to report that cinnamon rolls did not appear anywhere on that plate. I think by now most of us know what should be on our dinner plate in terms of healthy, well-rounded nutrient-laden meals, but it is my considered opinion that our breakfast plate should include cinnamon rolls now and then. And not just any cinnamon roll, mind you, but how ‘bout a homemade cinnamon roll hybrid that is a cross between a cinnamon roll and cinnamon toast, is super easy to make and gosh darn delicious. In honor of their ancestry, I call these little gems cinnamon toast rolls, and here’s all you need to make them… Yep. That’s it… some soft white bread, some butter and some cinnamon sugar.

Caramel Brownie Cheesecake This is a monkeyhead concoction so please don’t be disappointed with me that it’s not 100% homemade. Sometimes as a mom you have to go with your childrens ideas in order to lift their creative wings. Monkey One loves cheesecake and caramel, Monkey Two has a passion for brownies you put the two of these knuckleheads together and look at what they come up with… Caramel Brownie Cheesecake. You gotta love the way these boys think. To see their vision come to fruition we used one of our favorite brownie mixes, a no bake white chocolate cheesecake recipe from Williams-Sonoma and we tried Jamie’s homemade caramel recipe from My Baking Addiction.

girl meets life. - StumbleUpon I don’t say this very often. But this is one of the most delicious things I’ve ever eaten. Remember how I made dense, fudgy brownies by using a boxed chocolate cake mix? Well, let’s just say that I haven’t been able to stop imagining doing the same with a yellow cake mix ever since. I thought, if this method can get me to actually love chocolate, how insanely good would a cake version be?? So, chocolate-lovers, this isn’t entirely for you.

Pumpkin-Cream Cheese Truffles Method: Melt 1/2 cup of the chocolate in a double boiler over medium-low heat or in the microwave for about 1 minute. Stir often to keep the chocolate from burning. Transfer to a large bowl. Add gingersnap crumbs, pumpkin, graham cracker crumbs, sugar, zest, cinnamon, salt and cream cheese and beat with an electric mixer until smooth.
