We have pretty moderate temperatures, the air smells clean from the coastal breeze, we have family close, friends around we've had for decades, we live in a safe area and have jobs we like which support the life we've built in this place (it's a privilege to write things like that, that is not lost on me, especially these days). There is traffic and smog, and property is stupid expensive, but the positives keep us here and hustling. Sometimes being comfortable feels stale and stagnant, and stagnancy does not breed creativity or action or new ideas or a life that feels lived in.

I see you people who make summer bucket lists and I imagine that helps one to optimize their time this season. It has that perfect mix of sweet and savoury as the flavours of the mango and pomegranates are perfectly balanced by the lambs lettuce, avocado and pumpkin seeds. The textures also complement each other so well, with the soft chunks of mango and avocado contrasting against the crunchy bites of pumpkin seeds and pomegranates. While these ingredients taste amazing on their own, they become a trillion times more delicious when the world’s best salad dressing is added. I am not kidding this dressing is seriously insane. The combination of mango, apple cider vinegar, avocado, chilli, paprika and raw agave syrup is too good.

We’ve been enjoying plenty of asparagus and sugar snap green peas lately, so combining them in a fresh, vibrantly flavoured salad seems like the best idea. Green peas and asparagus are nutritional powerhouses. Both vegetables contain very high amounts of folate (a.k.a. folic acid), a b-complex vitamin that supports cell production (especially in your skin! Yay!) , allows nerves to function properly, and helps prevent osteoporosis-related bone fractures. Olive, Pine Nut and Zucchini Salad. I find that it can be hard to get the perfect mix of ingredients that really makes a plate of salad exciting, so I’m always on the look out for new ideas.

My recent olive obsession inspired this one, which is truly awesome. The combination of toasted pine nuts, raw zucchini slices, sweet cherry tomatoes, creamy avocado, ever-so-slightly bitter rocket and juicy black and green olives is just unreal. So simple, so delicious and drizzled with a little apple cider vinegar and sprinkled with salt it is just heaven! I love! It’s a fantastic 5 minute lunch dish when you’re in a rush – everything can be tossed together so easily, just a little chopping and toasting required. A plate of this salad is an amazing way to get in a lot of your needed daily goodness as it is bursting with nutritional value.

Serves 2 - 1 large handful of black olives - 1 large handful of green olives - 1 zucchini.
