Coconut Oat Protein Bites | Yeah…imma eat that. I wanted pancakes for breakfast. So I made a protein pancakes and they turned out gorgeous! Then I tasted them. To say the least, they left MUCH to be desired. They were so beyond dense. For a second, I thought that maybe these dense pancakes could be a great thing. I’m not sure what went wrong. They had potential. A great future ahead of them. I had high hopes for the first bite. And the worst part was that these pancakes smelled completely fabulous. So I was hungry, annoyed and pancake-less. And at that point, all I wanted was something that I could make and eat within 10 minutes. So I mixed up some oats and peanut butter and the cookie bite was born. Cookies for breakfast are always a happy thing.
