Versatile Basil Pesto Recipe | Pesto Recipes Today I went to the farmers market and bought 1 bunch of basil for $2. Of course I knew I would be making fresh garlic and basil pesto to use for a variety of dishes. What I love about pesto is its versatility. Versatile Basil Pesto Recipe | Pesto Recipes

Herb Focaccia Bread Herb Focaccia Bread Focaccia is a delicious, flat oven-baked bread that is perfect for yeast aficionados and even more perfect for those who are a leetle scared of yeast and don’t know where to start. A very non-fussy bread dough is whipped together, kneaded for a bit, and then spread into a large baking sheet by none other than your two little hands. Dimpled with little indentations and brushed with olive oil, the dough is baked at a high temperature until golden brown. The hot, tender bread is brushed with a simple mixture of olive oil and salt which gives the outer layer a delicious texture and flavor. I’ve been looking for a foolproof focaccia recipe and was thrilled when Megan S., a blog reader, sent this one to me. The addition of a myriad of herbs makes this bread pop with flavor and I promise, it is a really, really hard bread to mess up.
What is ciabatta bread and why on earth should you make your own? Excellent questions… First of all, ciabatta is an Italian bread that is long and flat-ish, somewhat in the shape of a slipper (which is what the word “ciabatta” literally translates to). It is slightly crispy on the outside with a deliciously tender and airy crumb. To brine the chicken:Rinse the chicken, drain, and set aside. Combine all the remaining brining ingredients in a large bowl, stirring until the salt dissolves. Put the chicken in the brine, cover, and marinate, refrigerated, for 4 hours. To make the batter:Whisk the egg well in a stainless steel bowl and add the peanut oil and 2 1/2 cups water. In a separate bowl, combine all the remaining batter ingredients, then add the dry mixture to the egg mixture, whisking slowly so the batter doesn't clump. Stromboli Stromboli I made all my kids happy with this Stromboli. And they gladly ate the leftovers for lunch the next day. The recipe is from my sister-in-law and it’s a good one. It uses frozen bread dough, so no yeast or kneading required. The filling can be tailored to suit your tastes.

Red Velvet Crêpes I rolled my eyes at the red velvet cake trend, but now I can’t get enough. I’ll make any excuse to have ‘cake’ for breakfast– here’s my take on a classic. Red Velvet Crepes (Makes about 24, 8″ crepes) Ingredients: – 1 1/2 cups all-purpose flour - 1 teaspoon baking powder - 1/2 teaspoon baking soda - 1/4 teaspoon salt - 3 tablespoons sugar - 2 cups butter milk - 1 1/4 cup whole or lowfat milk - 1 large egg - 1 teaspoon vanilla extract - 1 1/2 tablespoons cocoa powder, sifted - 1 tablespoon red food color gel - 2 tablespoons unsalted butter, melted + 2 tablespoons cooking oil (for pan) *Update: Because the buttermilk lends to the acidity of this batter, do not substitute the baking soda for extra baking powder. If you add more baking powder, and omit the baking soda, you’ll end up with a heavy and dense crepe. Red Velvet Crêpes

Pepperoni Pizza Puffs If I ask my kids what they want for dinner, there’s a ninety percent chance they will say pizza. They love it, as most kids do. I guess I have an affection for it too, but we don’t indulge too often. If I had to choose a favorite pizza, it would be the Hawaiian, but no one else in my household appreciates its flavors like I do, too bad for them. So when my kids came home from school and I had this afternoon snack waiting for them, they were pretty excited to be having pizza at 3 PM. Pepperoni Pizza Puffs
If you've perused through enough of my posts and recipes, you may have noticed my slight obsession with the creation of stripes, swirls and spirals in my edibles. As well as a borderline addiction to pinks and purples :-). As idiosyncratic as it sounds, these are the things make me happy...my brain probably swims in a pink and purple sea of swirls and stripes on a daily basis. Imagine that. I like to think that I'm quite normal; each to his own, wouldn't you say? Nutella and Peanut Butter Stripe Bread
This year was not the best year for growing tomatoes in New England. My Mom has a few plants and while they did produce many great fruits, it was nothing close to what it should have been. Because of rain at the beginning of the season, but nice weather towards the end, there are many green tomatoes on the plants at the moment that will never ripen. I have always been curious about fried green tomatoes, so I snatched a few off the vine and tried it out. Fried Green Tomatoes

October 2, 2010 My mom is obsessed with keeping a stocked freezer, but I guess I don’t really take after her, because my freezer tends to be relatively empty, aside from random containers of stock/ramen broth, frozen dumplings and pierogi. I admit, I store buy frozen chinese dumplings and pierogi for those times that I just don’t feel like cooking. I tell myself it’s because of ease and convenience, but really, I just love the taste of frozen pockets filled with deliciousness. Pierogi Recipe
