This Autumn Kale Apple and Quinoa Salad has totally changed my entire outlook on raw kale. We couldn’t get over how good this salad was and I’m already thinking of when I’ll be making it again! What helps a lot with this salad is letting the dressing rest on the kale for 15 minutes before serving it to help soften the kale. The flavor of the dressing, thanks to the lemon juice and honey in it, also really helps tone down the flavor of the kale.

I just served this kale salad as a healthy side to grilled chicken for dinner and it was such a delicious meal! Well imagine the flavors of a York or Junior Mints in soft and decadent cake form! Yes, it’s seriously dreamy, and it should definitely be added to your holiday baking list – probably at the very top :). For Christmas dessert this year I’m torn between this delicious Peppermint Chocolate Cake, my Peppermint Bark Cheesecake, my Vanilla Bean Cheesecake or this Coconut Cake. Too many of my favorites to choose from! This cake is the infamous Hershey’s cake recipe which I added a few minor tweaks too, like adding buttermilk in place of the milk for more flavor and replacing some of the vanilla extract for peppermint. A pretty awesome effort to get to 90 so i thought he deserved a pretty awesome cake. Unfortunately due to other commitments I didn't have to time to create a fondant-covered cake so instead set out to make a black forest cake with black forest cupcakes. I used a recipe from AWW 'Bake' to create the black forest cake. However, considering i can never follow a recipe exactly, i tweaked it a bit and coated the cake in a chocolate cream and flakes, rather than just coating the top with cream. The result was pretty spectacular and i had lots of happy family members scoffing down cake!
