I’m sure I frustrate the crap out of Nancy sometimes because I’m always looking for something better when it comes to food and recipes. Now mind you , this mac-n-cheese is not Bobby Flay mac-n-cheese with some crazy-sexy ingredients, but it is really, really good! I would make it for any of my friends and be proud. My first attempt was with a Jamie Oliver version that didn’t include a bechamel sauce but instead called for mixing the cooked pasta with the cheese and then baking it.

The second version, I made a few nights ago for my best bud Chad, Nancy and the boys. Chad is up from San Francisco and has been visiting for the past week. The other day I was scanning through my copy of William & Sonoma’s: Tools and Techniques. And, they are crazy easy to make. Pre-heat the oven to 400 degrees.

Trim the crust and the corners off the bread, making wonky looking circles. Line a sheet pan with parchment paper and lay the bacon strips on it. Shape the cooled bacon into the toast cups, with the meaty side out. Also, if you aren’t a fan of creamy delicious runny eggs you can beat 4 eggs with a bit of milk, season and spoon into the cups. Earlier in the week, a friend emailed me a link to a recipe for real, Tudor-style butterbeer. Apparently butterbeer is not just the stuff of Harry Potter culinary lore, but a real drink imbibed by real people with a real recipe to boot. This brought to mind my high school days, when I would make faux butterbeer for my friends using homemade hot buttered rum mix and root beer. I would warm up the root beer on the stove and whisk in the hot buttered rum mix, and serve to friends dressed in festive hats and robes.

We always saw Harry Potter on opening night, and we always dressed in costume (we did the same thing for Lord of the Rings). We were were (and sometimes still are) those kids! When I discovered the root beer/hot buttered rum mix drink I was ecstatic, because it brought an additional air of authenticity to our festivities. My friend’s boyfriend once innocently asked if I had anything he could snack on — maybe some chips and salsa? My friend nearly fell on the floor laughing at the thought of me not having chips and salsa in the house. There is no risk of that. Ever. So when my awesome world-traveling chef cousin came to town for a few days, she offered to teach me how to make roasted red salsa and tamales (more on that later). And people, this salsa. Note that this makes a lot — a big mixing bowl full. 16 full size tomatoes, or nearly a produce bag full of roma tomatoes (we used roma)2-3 yellow onions20-25 Serrano peppers (remove caps) Note: this many peppers makes it hot.

Let it all cool a bit, then run through the food processor with salt and cilantro (we had to do this in two batches)Stir it all together and eat with abandon.
