No-Bake Almond Joy Granola Bars. May 23, 2014Angela (Oh She Glows) It appears I’m on a granola bar kick this week. and I can’t be stopped. But I didn’t think you’d mind too much? Experimenting with granola bar recipes (and flavours) is one of my favourite things to do. It’s rare that I don’t have a bar tucked away in my purse for “emergencies”. You know, hangry attacks! Much like my Feel Good Hearty Granola Bars, these bars are also lower in sugar than most (5.8 grams per bar). The only caveat with this recipe is that the bars don’t hold together perfectly, so I recommend storing them in the fridge and not letting them sit at room temperature. Oh and for the record, I did try baking a batch in the oven for curiosity’s sake and the no-bake version won by a landslide. Like most granola bar recipes, this one is versatile so be sure to let me know what flavours you come up with in the comment section. Tropical Chewy Granola Bars. Returning home from such an epic holiday, sitting here at my desk in my apartment feeling a million miles away from anything tropical, there is a part of me that wants to say I’m getting “back to reality”. But that would be inaccurate, as I believe that the island of Kauai was absolutely the realest place I’ve ever been. What do I mean by this? Well, I have never in my life been faced with more awe-inspiring nature, powerful energies, provocative weather, and life-challenging situations.

It was the biggest dose of reality I could have gotten, anywhere. I think the thing that struck me as soon as we left the airport was how low-key the island seemed. No huge high-rise hotels, no chain restaurants, no four-lane highways. The first week of our trip, we were staying on the north side of the island, which during the winter and spring seasons receives a lot of rain. January 8, 2014Angela (Oh She Glows) The alternate title for these bars was: ultra dense, doughy, chewy, soft, seedy, hearty, protein-and-fibre-packed granola bars, sweetened naturally with dates! I can be a bit wordy at times. Anyway, these are not your average granola bars! Bursting with chia, sunflower, and pepita seeds, they pack a hefty amount of protein, fibre, and omega fatty acids and are naturally sweetened with date paste (a simple blend of water and pitted dates) instead of sugar. I like to think of these as an “adult” granola bar or a muesli breakfast bar of sorts, although I could also see my hockey-loving nephews enjoying these as fuel for the game.

For those with nut allergies, you’ll be happy to know these are totally nut-free, just like my Super Power Chia Bread which this recipe is adapted from. I love my husband’s sweats. They are just so much more comfy and roomy than my own. On Saturday night I put them on before bed and then I never changed out of them.
