This tart is a vehicle for caramelized onions. It’s also inspired by an appetizer I ate years ago in a Swiss auberge overlooking the Lake of Geneva. It’s been so long, I can’t remember the name of the restaurant, but I do remember the onion tart. It was simple and rustic, just like the half-timbered dining room with its roaring open fire where we tasted it.

Feel free to play around with the stuffing, Mexican chorizo is great for this, but we've also used hot Louisiana pork sausage. Or you can skip the pork all together and just use a jack cheese stuffing.
1 Combine flour, salt, and sugar in a food processor; pulse to mix. Add butter and pulse 6 to 8 times, until mixture resembles coarse meal, with pea size pieces of butter. Add ice water 1 Tbsp at a time, pulsing until mixture just begins to clump together. If you pinch some of the crumbly dough and it holds together, it's ready. If the dough doesn't hold together, add a little more water and pulse again.

My friend Suzanne’s daughter Audrey loves to cook. When Audrey and I were first getting to know each other she made me a batch of her favorite giant ginger cookies. (She thinks she got the recipe from an old Sunset magazine, but I haven’t been able to find the actual source.)
Our tour of Brazil continues. After posting the moqueca recipe, several of you asked if I had a recipe for Pão de Queijo, or Brazilian cheese bread, sort of like a chewy cheese puff made with tapioca flour. As a matter of fact, I do. My friend Bill gave me this recipe years ago, a favorite from his Brazilian wife Silvia . I’ve made it several times, each time with different cheeses. Talk about addictive!

We made this lovely gâteau a few days ago with some fresh blueberries now in season. Although the cake was delicious, I’m beginning to think that fresh blueberries are best eaten fresh. If we can’t tell the difference after cooking between fresh or frozen blueberries, we may as well use frozen for baked goods. Trader Joe’s sells good quality frozen blueberries, and for less than what you will pay for fresh, even in season. Ingredients
One of my favorite recipes on this site is the smoked salmon and goat cheese toasts ; I just love the blending of flavors of the herbed goat cheese, the salmon, and lemon zest on crunchy buttered toasts.
