Colcannon Puffs. With St. Patrick’s Day just around the corner, tonight I couldn’t resist making one more Irish-themed recipe. I had a bunch of kale in the fridge that I needed to use up, so my thoughts immediately went to colcannon, the traditional Irish dish of mashed potatoes and cabbage or kale. Then a conversation about potato pancakes got me thinking of the ones my mother used to make with leftover potatoes, and soon I was contemplating colcannon pancakes.
Sometime between cooking the potatoes and adding the seasonings I decided to try baking the colcannon in small balls. Tender on the inside, lightly crispy on the outside, these deliciously seasoned puffs may have your kids eating kale, too! To save time, you can also form these into larger patties and pan-fry in a non-stick skillet. Ingredients Instructions Cut the potatoes into small cubes (about 1/2-inch), put them in a large pot, and cover with water. Authentic shepherd's pie is a comfort food classic, but there's no room in my diet or grocery budget for a heavy dish of ground lamb or beef and buttery potatoes, except as an occasional treat. Lentils and mushrooms are more my speed, and sweet potatoes, roasted until creamy-soft, need just a little salt and pepper to be a flavorful topping.
This recipe uses one unusual ingredient: steel cut oats! The dry oats, cooked and drained with the lentils, release just enough starch to bind the filling into a creamy, mushroomy mass rather than a loose scattering of lentils and vegetables. It also adds a texture somewhat like ground meat, but isn't noticeable unless you know to look for it, so your guests will have no idea their dinner includes a nutritious breakfast staple. Speaking of guests, this recipe is an ideal dinner party dish for vegan or vegetarian eaters. Lentil, Mushroom & Sweet Potato Shepherd's Pie Makes 6 servings Preheat the oven to 400°F. Preheat oven to 350°F. Additional Notes: Holiday Soup For The Soul. Before we get to this incredible soup, there are a couple things I need to get off my chest. 1) Eric and I have lots of nicknames for each other.
Two of our favourites are: ‘Pinky’ and ‘The Brain’. Remember that show? Depending on the day, we fight over who is Pinky and who is The Brain. 2) When we are trying to decide what to do at night or on the weekends you can often hear us say to one another, ‘Gee Brain, what do you want to do tonight?’ 3) We also have a special voice just for Sketchie. Eric said (in Sketchie’s squeaky voice), ‘Not impressed’. We are totally normal. Last night, Eric said I could be ‘The Brain’ because I whipped up this amazing soup. I turned Eric, a former non-soup lover, into a soup lover in just over 10 years. Never say never… ;) Holiday Soup For The Soul Print this post! This is hands down one of my all time favourite soups! This post has been a long time coming. I should have posted it months and months ago but I really wanted to take photos of the process of making cauliflower “rice” and not just a dish with it in it.
Finally, last week, after a discussion on my Facebook page about serving Beef Bibimbap over brown rice or cauliflower rice (recipe coming later this week!) , someone mentioned making cauliflower rice in big batches and freezing it. Why hadn’t I thought to do that before? I picked up a bunch of organic cauliflower at Trader Joe’s for a great price and set up to stock my freezer and (finally) take some in process photos.
OK, so let’s talk about cauliflower “rice”. It’s zero Weight Watchers Points Plus, Low-Carb, Slow Carb, South Beach diet friendly, Paleo, Primal and just a good way to get more vegetables into your diet.
