How To Cook Like An Italian. Last updated 15:38 07/02/2014 SIMPLE IS BEST: Ah, the sweet joys of a simple pasta. When chef Stefano Manfredi recalls the food from his hometown of Gottolengo, Lombardy, in northern Italy, he can still feel the seasons and hear the clash and clank of saucepans and the bubble of chatter in the kitchen. Manfredi believes the best Italian cooking comes from recipes that have been passed along families for generations and interwoven with stories, passion and love. The 60-year-old, who migrated to Australia with his family in 1961, says in order to cook like an Italian, home cooks must first learn to develop an instinct for simplicity.
"Simplicity is one of the building blocks of good Italian food, and understanding that simplicity is very important - it's what makes a good Italian cook a great Italian cook," says Manfredi, who recently released the encyclopaedic Stefano Manfredi's Italian Food. "Italians cook with provenance and seasonality in mind," he says. Stefano's golden rules: Seafood Orzo Salad | Recipes | TABASCO.COM. Baked lamb with potatoes - recipes Very good!
Cotter’s Borlotti Bean, Zucchini and Roasted Red Pepper Soup « the taste space – steam, bake, boil, shake! Oh gosh, am I ever happy to be back at home! Thankfully I was able to enjoy the summer weather this weekend. 22°C, baby! Rob and I took advantage of the glorious weather by taking out our bikes for our first (real) bike ride of the year. I know it has only been 3 months, but I had forgotten how much I love riding my road bike.
With the beautiful weather in Toronto, the last thing I wanted was to cook up a storm over the weekend. If you thought my fridge was full, you haven’t seen my freezer yet! Earlier, way earlier in the summer, I gushed over Denis Cotter. Cotter is the master of the multi-component meal, bringing out the best of each part of the dish. Thankfully, this soup freezes well (I made individual servings and simply combined all the components together) and I still have a few servings left. Author Notes: This is a classic minestrone that incorporates Savoy cabbage, borlotti beans, parmesan, and fresh herbs. My mother used to make similar soups when I was growing up and this version is one of my favorite comfort foods. I have developed a bit of an obsession for Rancho Gordo beans, and their borlotti beans are classic in a minestrone. I recommend you try their beans if you haven't already, but if you can't find borlotti beans, pinto beans or even kidney beans would do. Rancho Gordo's beans are fresher than most dried beans and don't need to cook as long so if you are not using them, soak the beans overnight first. Also, when we finish a block of fresh parmesan, I keep the rind in the refrigerator to use in soups. If you don't have one on hand, omit that ingredient and add a bit more cheese at the table.

Popular in Food & Drink I have to admit I have a few pet peeves when it comes to cooking Italian food at home.
My biggest issue is with the claim that good Italian food costs too much and is time consuming to prepare. I say "Nonsense! " and counter with a story near and dear to my heart: namely, my Italian parents' food odysey upon arriving in the United States in the 1970s. Like with many recent immigrants, money was tight in the Scordo household, and time was even harder to come by as both of my parents worked long hours. Eventually, however, enough Italians immigrated to our region of the United States, and prices for Italian specialty foods came down. The solution to cooking great Italian at home isn't complex; it's centered on knowing which ingredients to buy, which dishes to prepare, and how to most effectively spend time in the kitchen. Pasta I'm sure you expected this; it's at the heart of Italian cooking. Eat Eat Hurrah! Basil & more Basil - Pesto Sauce & Italian Cooking ! In Italian cooking, basil is used quite often in pesto sauce and many other recipes. Pesto sauce was a mainstay at our house. My mother insisted on the classic Italian version which she made from scratch in season. My father raised some of the most incredible basil I have ever tasted and the difference that this great herb makes in this sauce is indescribable; it’s scrumptious. My father’s basil was always dark green and thick and crisp, yet tender. You could smell the basil patch on our farm from a distance. By the early sixties my father, who farmed both in Sicily and in the U.S., was raising dozens of varieties of specialty vegetables and herbs that were sold to gourmet and ethnic markets, restaurants, and hotel kitchens. He would seed outdoor basil the third week in May and on June first of each year he would transplant seedlings started in the greenhouse to the one acre basil plot outdoors.

You know you’ve done something right with broccoli when the person you made it for describes it to someone else the next day as “better than biting into a steak.” Those were Craig’s words and they were a marked change from the first words he uttered about the broccoli, before he bit in: “You made broccoli for dinner? Broccoli and sweet potatoes?” Then he did bite in and his eyes lit up. “Oh my God,” he said. “This is the best broccoli I’ve ever had in my life.” Later he said: “If parents made this broccoli for their kids, kids wouldn’t hate broccoli. They’d beg for it.” So what did I do to the broccoli to make it taste so good? I can’t take any credit.
I’m going to have a hard time this week not posting all of the recipes from her new book, Back To Basics. Specifically, she loves roasting vegetables at a high temperature until they caramelize. Normally, broccoli gets squishy when you cook it. Seriously, this recipe is so easy I can recite it without looking at the book. Now, it’s easy. And please: do not be afraid of the raw chicken.
I’m actually beginning to believe fear of raw chicken is a diagnosable phobia. Place the chicken breasts inside of a Ziploc bag—either one at a time or, if the bag is gigantic like this one, all at once. I put them inside Ziplocs so that when I pound the heck out of them here in a second, microscopic particles of raw chicken will not end up across the room on my computer’s keyboard. Now THAT would gross me out the door. Pound the chicken with the smooth side of a mallet. You want them to be very thin–about 1/8 to 1/4″ thick. Add the flour to a large plate.
And pepper. Then season the other side. Oh! Olive recipes | Hugh Fearnley-Whittingstall. By this point in our use-up-the-old-to-make–way-for the-new store cupboard forage, you may well have polished off all the dates, but I hope you haven't quite finished with the capers, if only because they go so wonderfully with this week's ingredient, olives. Whether your olives come in tubs, jars or tins, in oil or in brine, their punchy flavour and fleshy nature make them just the thing to whizz into a dip, perk up a stew or add an extra dimension to a salad or pizza.
Olives are probably one of the Earth's oldest cultivated crops. They were grown on Crete by 3000BC and excavations of later Minoan palaces found tools, amphorae and wall paintings relating to their production. In legend, the olive tree was created by the goddess Athena as a gift to the city that bears her name, while they're mentioned in the Bible as synonymous with plenty, and their branches symbolise peace, wisdom and victory.
