Like this: That works fine if I use everything up right away, but honestly that doesn't happen very often. Instead, I stock up on onions, garlic or shallots for use in specific recipes, and some of them end up hanging around in the drawer for awhile. Here's how some of them look after 2 or 3 months; rotten, moldy, or sprouting.....wasted: A few months ago, my mom (aka Grammy) came to the rescue. However, this will also take a lot of the taste out of the onion, so it isn't our preferred method. But it does hold back the tears! I did a little experimentation over the last few weeks since I've been using a lot of white and yellow onions for cooking, and putting the onions in the freezer for about 15 minutes fore cutting helps a LOT more than putting them in the fridge. With the freezer batch, cutting the onions was almost pleasant!

I also didn't really notice much of a difference in taste, although the onions were quite fresh in all instances, so maybe that helps. Why would putting an onion in the fridge take the flavor out?
