Yotam Ottolenghi – I salute you. Chickpea Salad I first published this about a month after I started this website back in 2014. The fact that I, a self confessed Carb/Carnivore/Cheese Monster, published a vegan salad so early on (patience having never been my greatest virtue) and have taken it upon myself to reshoot the recipe, rewrite the post and make a recipe video for a chickpea salad should speak volumes.

It's simple to make, but it does need time as it's baked low and slow to prevent cracks and create lightness. It's filled with a ricotta interior that's flavoured with little more than honey and lemon zest, giving it a subtle sweetness. A touch of fresh thyme also makes the crust extra special. Tips: Cream cheese: Use cream cheese that comes in a block, not a tub, which has air pre-whipped into it.

That’s where my mind goes when I think of the most perfect side salad I’ve ever had. Was it the champagne vinaigrette? The chicken dripping? The whole roast-chicken it’s served under?
